    I’m in search of recipes for the last 3 months for vegan, keto, sugar-free, oil-free, gluten-free, and non-deep-fried foods… it’s been a challenge but I’ve figured out how to make substitutions that work…

      And mine! Happy to exchange all my recipes. They're gluten free, sugar free, deep fried free, keto and vegan, all cooked from scratch, no ultra processed ingredients either. But I love umami flavours and fermented foods so if you don't my recipes may not be of your liking, I'm Spanish so some are more Mediterranean flavours than Asian inspired.

    Happy to hear about your success decreasing or eliminating your pain issues. Going vegan 10 years ago helped me with stomach issues and my husband eliminated his acid reflux. What we put in our bodies really matters, doesn’t it?!

    I’ve made the shiritaki ramen almost daily since you shared the original recipe, and since the noodles are only 20 calories I often double it for dinner. I mix in pan fried oyster mushrooms, onions, and sugar snap peas and top with savory crumbled tofu. It’s the best recipe I’ve ever had using those noodles, definitely a staple ❤

    Thanks Mary, I'm really appreciating your focus on vegan keto, I have some significant neurological issues, as well as things that cause me chronic pain - and although I had heard about how many benefits it could bring in the past, my interest has been resparked after listening to Dr Chris Palmer talk about the link between keto and neurological health. He really emphasised that it's not a one size fits all approach, and isn't about the numbers, it's about what makes you feel good! Thankyou 💙🌱

    I'm in love with my vegan sausage McMuffins for breakfast. I get a 6 pack of 100% whole wheat (vegan) English muffins for $1 on sale or $1.50 regular price, at Meijer. I cut a block of tofu into 6 slabs and pan fry with veg oil. I season the tofu eggs with Old Bay or with turmeric and chili powder. I brown Morningstar vegan breakfast sausage patties in a pan & season with ground cayenne and ground fennel seed. I toast & butter (vegan butter) a muffin, lay on a tofu egg & a sausage patty. Sprinkle of salt! DELICIOUS. BETTER THAN MCDONALDS!!!

    Thanks Mary for sharing your vegan KETO recipes! It is EXTREMELY hard to find vegan keto recipes that look appetizing! I have recently been told by my doctor that a keto diet would be beneficial for my autoimmune disorder that I have. I have tried going keto in the past just to see what its like and I quickly gave up because I LOVVVVVE potatoes and anything bread/pastry related. Anways, just wanted to say thank you for sharing your vegan keto recipes! Much appreciated! :)

    MARY! i love these long videos and your commentaries. I am Keto myself well , “lazy keto”, had a biscuit muffin this morning. But that’s probably my only set of carbs for the day. It’s usually high protein yogurt, mint water, and protein shakes along with whatever whole foods i can throw into the mix without overdoing the carbs.

    That high fat percentage is usually only recommended in the beginning to get yourself into ketosis. Once you are in ketosis you can lower your fat consumption to maintain it bc like you said your body can use your body fat for energy. Ofc everyone's body is different. Im so glad your ketosis journey has helped you sm! Theres so many misconceptions and misinformation on keto but It really has endless benefits!

    Yes Please! I'd love to see both keto tortillas and bread recipes. Both are also pricy in the US. I've been able to get decent versions of both at my local discount grocery store (Aldi) but they are not dependable to have both all the time. :)

      Oh yes we have to enjoy it while it lasts!! Summer is way too short in Canada 😭 This particular cat loves be by my side all the time so it's not hard to get his cuteness on camera. My other cat, I swear knows when the camera is on and avoids it!

      I was at first too!! I watched some youtube videos that recommended to leave it open because it helps to see if you need to lower the heat. Apparently making sure it comes out slowly improves the flavour!

    18:32 - This is interesting and it reaffirms what nutrition experts always suspected, which is that the body processes carbs differently. I think the 40 to 60 g net carbs are easier to sustain a state of ketosis if you're eating keto-friendly carbs (mainly from whole foods). Processed carbs that come from wheat, or that are higher in sugar, are more likely to spike insulin and kick you out of ketosis. I'm curious if people who do "Dirty Keto" experience this issue. Personally, I'm carb-sensitive and a decade on a HCLF vegan diet didn't do my metabolism any favors. I'm the heaviest I've ever been, but I'm excited to follow your journey bc as serendipity would have it, I've decided to try Keto Veg. I hope with enough yummy recipes, I won't miss the bread or pasta.

    Glad you did another video on this. I really do believe I feel my best following a vegan keto diet. I started it again last week eating about 35 carbs a day and not as much fat as recommended simply because I felt satisfied with the amount I consumed. I felt great. I splurged over the weekend not keto and felt the difference in a negative way within hours.

      @@YourMajesty143 I have Bob's Red Mill golden flax in my freezer. Two bags actually because I forgot to stop my Amazon subscription when I realized I don't like golden flax either lol I hide them in my protein shakes. I love the idea of both flax and hemp seeds but hate the flavors of both. I keep trying though because I know they're both super foods and insanely healthy. I'll look up NutritionRefind's recipe! Often the way an ingredient is used or the way it's cooked makes a difference too, so perhaps I'll like them. For now I'm using commercial sushi soy wrappers with lettuce to make wraps. They work well but I'd like something less processed for long term eating.

    Tortilla recipe would be great. Also if it's possible to dehydrate them and use as chips.
    After keto-phase the same with dosa would be interesting for me. I stumbled upon dosa because I wanted an easier corn tortillas recipe.
    And dosa (with corn flour) is easier to make and fermented (hence better for nutrient absorption). A win-win.

      @@marystestkitchen I would prefer dehydration (with oil) over airfry or deep fry (just because of health reasons - Acrylamide).
      And not all things which can be fried or airfryed taste good dehydrated. White potatoes for example.

    Not sure whether you see comments on older vids, but just in case: I feel strongly that humans aren't built to digest wheat. I say this regretfully -- with food prices so high, I've had to add whole-wheat pasta [ = v. cheap] to my diet, and I enjoy it -- but nonetheless firmly. So, it's not surprising that your body responded diff. after you'd had some wheat pasta. I agree with "All carbs are different, and some aren't beneficial" and am adding "Some seemingly healthful carbs, such as whole wheat, are maybe unhealthful for some / lots / all of us." Best wishes.

    I’m trying keto out and Buldak is one of the foods I am struggling with not being able eat the most. I used to eat those noodles at least 2-3 times per week. I will definitely try this recipe out!

    I didn't know you were a Keto Vegan. I just thought you tested nuts for Tofu😮. I guess you can tell that I've never looked at you page in detail. I'm so sorry. Now that I'll go Vegan Keto after my fast I'll do so. The pumpin seed Tofu is my favorite. I love it.       I think it is just magnetic. They also sell these pot to be able to use on induction stoves but they are not cheap.

    I've been watching your different tofus out of legumes vids & loving them, I know I even left some comments, but idk why I didn't realize you were vegan keto- duh, me!😂🤷‍♀️ Ive been plant based for years now but I cut out gluten at the end of last year, and I feel much better, so, after making diff adjustments this month I decided I wanted to try keto or paleo, I'm really kind of concerned or unsure of some things though, so this will be a helpful guide just to give me an idea. Also, I looked up the diff between between keto & Paleo but I've forgotten, esp as it relates to plant based- I think I looked up Too much stuff this past month trying to figure out my optimal diet, bc now my head is just swirling w confusion abt so many things abt cutting out carbs on a plant based diet.

      I hope this helps! Just a side note that I only do keto because I HAVE to. It's really restrictive and unnecessary to go that far for most people; especially for vegans.

    I love tofu puffs, but I've never thought to bake them *_* I know what I'm doing with them next time! Plus, my local grocery has stopped selling the frozen ones, so I have to go with the packs you have in your video now and I sometimes struggle to use them up (I live alone and my appetite comes and goes depending on my menstrual cycle!). They also just stopped selling frozen vegan Korean "steaks", truly an attack on me, personally.

    I'm so glad you're feeling better! I am trying to lose weight which is what brought me to low carb (LC) but what keeps me doing LC is that I have far less pain, and often no pain, than I had before. I can't eat sugar and have been sugar free for a month. I use allulose, erythritol and monk fruit (my body doesn't like Stevia) and now that I've been of sugar they taste amazing and I don't "need" real sugar. I've also noticed I only crave or want sweets once a week or less. I have So Delicious NSA ice cream in my freezer and another brand of vegan keto ice cream in my frig plus a bunch of vegan keto candies in my "sweets drawer" and most I've had for awhile which is so not like me! I know I'll still indulge in things I loved before but because I know they come with a very high, very painful price, those foods won't be often. I've even found ways of eating out with my friends and not kicking myself out of ketosis. I splurged the other day and had animal fries an at my favorite local vegan joint and they were EPIC! Normally, I would hand eaten all of them but I only wanted about half and ate my burger on my LC bun and I was happy with splurge dinner. It took a full day to bump me down to small amounts of ketones which is fine with me but my shoulder was bothering me this morning when I woke up. I'm finding sometimes it takes a day or two to feel it and I did this morning. They were still worth it and I won't do that again for another good while lol
    I love your cat and that you share your baby with us! Thank you for all the awesome videos! You inspired me the other day to open my jar of gochujang and I'm loving it. I'm a total baby so I only use the tiniest amount. I figure it's gotta be better than Sriracha which seems to have a ton more sugar. I need to buy gochugaru but I am afraid of buying a super spicy one. Do you have a brand suggestion? From all my research, it looks like the spice level can vary between brands A LOT and I do like spice but not burning my tongue off spice.
    Not checking my typos. My shoulder hurts and I don't have the patience lol I apologize in advance for them.

      Thanks for sharing! I swear we don't hear about the pain-reducing effects of having no sugar enough! 💖💖💖
      As for gochugaru, I will try to remember to show the package next time. But since I don't read Korean and the english label often doesn't say, I just ask the grocery store workers when i'm in the Korean grocery store. Hope that helps!

      @@marystestkitchen I'll see if we have a dedicated Korean market. I know we have a general Asian market that is huge called 99 Ranch Market. Next time I go there I'll ask someone. That's a great suggestion.
      Sugar is a killer for me! Nothing causes me pain like sugar. I've had a few bouts of pain (I have tendinitis in my left shoulder that is sometimes so bad that I can't move my arm) but nothing like when I eat sugar or just a really carb heavy meal. I pay attention to my carb intake and try to keep it between 30-50 net carbs but my main goal is to get my carbs from my protein and veggies. I can maintain ketosis with that many carbs but I also do prolonged IF for gut, liver and gallbladder health.
