    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on RUclips.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine.     I cant imagine how good these videos are for your business. Making people like me who have never tried sushi once in their life crave something they've never had. I've been watching your videos for years when you guys did diaries of a master sushi chef in the nove kitchen and bar and have always wanted to try sushi but have never had the chance.

    I love stone crab. My grandpa was a shrimper and every once in awhile he would bring home some stone crab claws. So good and sweet. Love it

    Good Afternoon!!! Another AMAZING video that leaves my mouth watering! You are always an inspiration and I can't thank you enough for sharing your incredible creations with us.
    For the general public, keep in mind that Hiro is illustrating the different size claws and their respective costs. If you are going to shred the meat for a roll, you can just as well use the medium sized claws that are less than half the $$$/LB of the jumbo or colossal claws. It might be a little more work, but it makes this dish accessible to the common masses (like you and I...) without breaking or killing your bank account. I look forward towards trying it!

    I don't mind if you guys use expensive or rare ingredients. I watch for a number of reasons because I'm generally interested and I like your show, if there is something I think I can make, I will. I have made Sushi before from watching Hiro.
    I like to watch for Hiro's technique, some recipes I think I could try or simply just for entertainment. Any video you guys upload will be interesting to me. People on RUclips, in general, just complain too much and forget to enjoy themselves. lol

    I usually do it a bit differently. I take a heavy duty, serrated steak knife (or serrated bread knife) and saw until I just get through the shell. Then, I bend away from the cut and it generally cracks quite cleanly, allowing easy removal of the meat.
    Also, I hope you were saving those shells to make stock!

      Actually, a good strong serrated knife cuts through in just a few seconds - like 3 or 4.
      Of course I only buy smalls and mediums...

    The bigger sizes of claws are more money per pound than the smaller ones - but they're still a lot cheaper than Joe's Crab Shack!

    Stunning!!! I like that you did not add to much to the roll and do not distract from the stone crabs. Price for them looks reasonable, similar to where I am in Germany.

    You might have shown the weight of the largest claw and compared it to the weights of the smaller ones.
    Then we could see whether 2 smaller equals one larger and if the cost varies.

      I'm sorry Hiroyuki, I just wondered if the same weight of meat in the small ones was cheaper than the equivalent amount in the huge claw and whether the taste of the big claw was better than the smaller ones. I really do watch everything because I make Rolls my self.

      I’ll take a crack at this one! The reason why stone crab claws are so expensive it the sheer amount of labor that goes into harvesting them! They first must be caught, then the larger claw is removed and the crab returned to the ocean. The claws are then steamed and quickly chilled/frozen to stop the cooking process and preserve them until they hit the shore and finally the stores where you eventually purchase them. All that processing takes manpower which has to be factored into the price. This also goes for all fish and seafood. If you really want a true look into just how hard these fishermen and women work then check out The earlier seasons of Deadliest Catch before Captain Phill Harris died (RIP) the show has sorta become nothing but drama ( not focusing on the fishing as much) since his passing. But man were those early seasons fun to watch! Crab Farts, never gets old seeing Phill Harris sniffing for Crab farts in the earlier seasons. The pranks are pretty good too! Well all except last seasons emergency beacon going off ( it wasn’t) rumor prank. That one wasn’t funny and put a lot of families in panic mode thinking the boat went down.
      Any who the first seasons really show just why Alaskan King Crab is so damn expensive.

    Thank you Chef Hiro for another great video. The food you made looks great. Recently, I went to the Japanese restaurant, where I live and I had seafood ramen and crispy wild salmon chips. It was so good. They use sustainable seafood. I hope you and your cameraman have a Merry Christmas and a Happy New Year.

      I've taken an hour and a half drive to go to H-Mart in Aurora Colorado. Just bring a cooler. It's worth it no matter how far away I keep moving! Lol...and there's a Whole Foods less than a mile away from me. I guess no matter where you are it seems worth it to find that one good place. Whole foods is good quality but expensive and they have about a tenth of the selection.
