first: both players can peek with third person, not only the defender. Second: in first person you enter the house and start looking fo the defender if he was expecting you you are dead immediately and won't be able to outspeed the defender EVER.
The point of the video is to show how much easier it is to hold a house in 3PP vs 1PP. In 3PP the defender can hold an angle waiting for the perfect shot, but in 1PP the defender needs to expose his body to know exactly where the attacker is located.
