Samlor Machou Kroeung: Cambodian Spicy Sour Soup Recipe

  • Ingredients:
    Kreoung( Cambodian Lemongrass Paste). Follow Kreoung recipe video posted on You Tube AngkorSpice
    - 6 Tbsp Kreoung
    - 1 and a quarter pound of mixed beef meat
    - 8 crispy eggplants
    - 1 pound water spinach stems
    - 2 Tbsp tamarind powder( add 1/2 Tbsp. first )
    - 1 Tbsp. fish paste or 2 to 3 Tbsp of fish sauce or a little of both
    - 1/2 Tbsp. sugar
    -7 cups water or homemade soup stock
    - 1/4 cup crush toasted Khmer Sleuk Katrop ( optional herb topping)
    - a few hot peppers (optional)
    STIR-FRY WATER SPINACH WITH SALTED SOYBEAN
    - half pound water spinach
    - 1 Tbsp minced garlic
    - 1 Tbsp salted soybeans
    - 1/2 Tbsp oil
    - 1/2 Tbsp sugar
    ***other seasoning I've used for this stir-fry are soy sauce, oyster and ground black pepper. The sauce shown on video are the basic.
    ***Beside water spinach and crispy eggplants, other vegetables I've used in Samlor Machou Kreoung are purple eggplant, celery, green papaya, young tamarind leaves, green young pulp of a jack fruit ( the white meat) and even asparagus . I use whatever vegetables available for each season

    This is a fantastic dish! I'm just starting to explore Cambodian cooking, and this soup with the sour/salty taste, with the wilted greens in a sweet/salty taste is fantastic. I can't wait to try more of your dishes. Thanks so much!

      apsaravideo You're welcome. I like mine spicy with extra hot peppers on the side. To save times I made mine in large batch and whatever left over, I transfer into a container and store in the freezer. Machou Kroeung is a soup that can be frozen for weeks and still taste like it was just cooked

      Ka Zana Thank you! I'll be speaking more Khmer in some videos because of the ingredients used in Khmer cooking. I don't know what they're called in English, so I say them the way my grandma used to say it.
