No Stress Instant Pot Risotto: Butternut Squash Edition

  • Once you've learned this Instant Pot Risotto with Butternut Squash Recipe, you'll be able to confidently throw lunch together and get your friends around the table no matter how busy life is! Risotto is one of the first Instant Pot Recipes which everyone should learn. This version is made with butternut squash and sweet peas and is completely without the stress of stirring stock into rice at a snail's pace, leaving plenty of time to get a side ready or just hang out with your friends while it's cooking. I had no white wine in the house so added an experimental ingredient to this Instant Pot recipe - and it worked out just fine! I love an experiment. I hope you enjoy the recipe.
    🍚 Ingredients:
    2 tbsp olive oil
    1 tbsp butter
    3 shallots, chopped
    2 cloves of garlic, minced
    A handful of sage leaves (for garnish)
    1/2 cup elderflower cordial (diluted 50:50) or white wine
    2 cups arborio rice (about 420g)
    3 cups of diced butternut squash (about 450g)
    4.5 cups of good chicken stock (about 1.2 litres)
    1 tsp salt
    1 cup parmesan grated (about 80g)
    1/2 cup frozen mange tout/peas
    More parmesan to garnish
    Optional: if you don't have high quality stock, add in 2 tsp dried oregano,, thyme or herbes de provence (stir in just before adding stock)

    I've made this same exact recipe in the Instant Pot. Risotto has never been easier to make. No more babysitting. Yummy!! Be well.

    I've made risotto in the Instant Pot before, it's a game changer isn't it! I love the fried sage leaves doing a bit of double duty - adding flavour to the oil remaining in the pot as well as a tasty garnish too!

    This looks amazing, you've very inspirational! Just wondering if I could adapt it to pearl barley and how long to cook it?

      Ah thank you so much Robin 😊. I've never done it but I googled 'pearly barley risotto pressure cooker' and a few recipes came up so it's worth a look. It looks like 2:1 liquid to barley ratio and 20 mins high and natural release is what most use . It should give that nice creaminess so you've got me interested. Let me know how you get on if you've time

    Hi Susan, just to tell you, I have had my IP Duo for about 18 months and do not have a problem with a spinning inner pot, it's perfectly flat on the bottom 😂 however I do agree with your comments regarding the trivet, it doesn't lock. I also agree that I could probably do with a drawer type Air Fryer as well, which one would you recommend

      Hi Delia, thank you for that. I haven't tested outside of Instant Pot to be honest but my sis loves the tiny one for 1 person families (see my video on that one) and I've had 2 of the other models. The Vortex Plus 5.7L (silver one) is a real workhorse and I love it. It's currently being temporarily 'looked after' by a friend while I test a bigger model out the Instant Vortex Plus VersaZone Air Fryer 8.5L. The difference between these two apart from size is that the first one is super flexible , a good size for most families, and easy to move the drawer around. The reason I got this bigger one is cos I heard people singing it's praises because of the drawer size and ability to use instead of the oven for big things like browning off a full size shepherds pie, making lasagna etc. It's huge compared to the Vortex Plus but I do like the ability to cook two things at once and time the two sides so they finish at the same time.Me and Mr Cooking and Calm are often eating different things so this works for us. It sort of depends how you cook as ever. The giant ones like this are more of an oven replacement but also more weight and bulk to clean and move around. The Vortex plus is a great all rounder and you can fit in eg. a shepherds pie for two hungry peeps easily. Easier to shake, clean and tip food out as drawer is smaller.
      I wouldn't get stuck on Instant Pot for airfryers- they're in no way as complex as pressure cookers/multi cookers so don't rule out other brands ...hmmmm...have I made things worse? I wish I could give a straight answer sometimes :)

    Am also thinking of getting a drawer type Air Fryer for bigger loads, my Duo is sometimes a bit small, any suggestions?😊

      Hi Delia, good to see you! If you have the room, I really love the IP Versazone with the drawer divider so you can use it as 1 large cooking area or split into two and sync the timings.     It looked very nice. I've made risotto a couple of times in my IP and it is so much easier than the stove top method. How did it turn out with the cordial in place of the wine?

      Thanks Tina - it turned out totally fine and no sticking. I think I might try not diluting it next time as it was hard to pick up the floral. I'm the same about wine in risotto having said that! Hope you are well?

    Hello there, hope you are well. Just a quickie, I don't have a rice button on my IP. I usually use Basmati it always comes out a bit gummed up. I usually rinse it then cook for 2 mins instant release, ant tips?

      I tend to do 1:1 water to basmati then 3 mins (if white) and natural release about 10. Some people prefer 1 rice to 1.25 water, It definitely goes gummy if I leave it on keep warm too long after npr. The other thing to try would be to put a dish towel over the top once removed lid to let it finish steaming.     Hello, I like you're channel very much, and I am learning a lot !! Soon I wil get my Instant pot Pro 8 qt air-fryer. I also want to bake bread in it, I saw a few YT videos with different kind of loaf pans ( Ninja loaf pan and a box loaf pan with upper lid ) . Do you have any advice to with one I could use the best for the 8 qt ?? ( I have to wait for a week or two before I can try you're recepies )

      Hi Jack ! Wow that's exciting - I'm sorry I've not baked bread in mine so not sure about the bread pans. If it's the 8Q pro crisp it's a good size, so there should be lots of choice. I hope you enjoy it - they're a lot of fun to cook with

      Ha ha , that's true but I'm not much of a baker and we either use our bread machine or I do sourdough which needs a scalding hot oven and too big for ip so it might be a while but I'll get on my list. Let me know how you get on and good luck with it all 👍

    I’m trouble with the instant pot! I’m so used to my old pressure king pro, how to you tell if the valve is sealed for pressure cooking or not? The PKP valve had an arrow clearly pointing to ‘open’ or ‘closed’. I just can’t tell with the instant pot
