If you're an Aussie like me then you will know about the classic Women's Weekly Children's birthday cake book. It was apart of all our childhoods. Here we will make the Number 1 cake keeping it easy, quick and delicious.
Cake:
2x Vanilla packet mix
320ml Milk
120g butter
4x eggs
Icing:
Mascarpone
Decoration:
Blue & Green sugar crystals
Instructions:
Pre heat oven to 160 degrees celcius fan forced
butter & flour 2x loaf tins
Combine the packet mix with the milk, butter and eggs
Mix with an electric beater on medium for 3mins
Seperate mixture into the prepared tins
Bake for 40-45mins
Let cakes cool completely before cutting and icing
HACK: refrigerate your cakes for 24hrs before cutting and icing
