Creamy No Onion Garlic White Sauce Pasta | Perfect for Navratri Meals

- Ingredients:
• Pasta: 200g (your choice of pasta)
• Salt: 1 tsp (for boiling pasta) + 1/2 tsp (for seasoning)
• Oil: 2 tsp (for boiling pasta)
• Vegetables:
• 1 bell pepper (chopped)
• 1 cup broccoli (chopped)
• Butter: 2 tsp (1 tsp for sautéing veggies + 1 tsp for white sauce)
• Maida (All-Purpose Flour): 1 tsp
• Milk: 1 glass
• Cheese Slice: 1
• Black Pepper: 1/4 tsp
• Oregano: 1/4 tsp (ensure it’s garlic-free)
• Chili Flakes: 1/4 tsp
• Parmesan Cheese: for seasoning (to taste)
Process:
1. Boil Pasta: In a pot, bring water to a boil. Add 1 tsp salt and 2 tsp oil, then add the pasta. Cook until al dente according to package instructions. Drain and set aside.
2. Chop Veggies: Prepare your choice of veggies. For this recipe, I used bell peppers and broccoli.
3. Sauté Veggies: In a pan, heat 1 tsp butter. Add the chopped veggies along with a pinch of salt and sauté until they are tender but still crisp. Remove and set aside.
4. Make the White Sauce: In the same pan, melt some more butter. Add 1 tsp maida (all-purpose flour) and cook for about 1 minute until it turns golden. Gradually whisk in 1 glass of milk and bring to a boil, stirring continuously.
5. Add Cheese: Once the sauce thickens slightly, add 1 cheese slice and mix until melted and creamy.
6. Combine: Add the sautéed veggies and the boiled pasta to the sauce. Season with 1/2 tsp salt, 1/4 tsp black pepper, 1/4 tsp oregano (ensure it’s garlic-free), and 1/4 tsp chili flakes. Cover the pan for 1-2 minutes to let the flavors meld.
7. Finish: Stir well, then serve hot. Top with Parmesan cheese for an extra touch of flavor.
