Chef John casually reminiscing about the inside-out grilled cheese sandwich is kinda like one of the Beatles saying "Oh yeah this reminds me this little record we made called Abbey Road". The inside-out grilled cheese is legendary at this point. I still go back and watch that video just for the nostalgia.

I need to make bread, anyway, so with homemade bread and marinated cheese, oh boy!
If someone wanted to pull put all the stops, for a small party, you could make these with slices of small baguettes. A good-sized griddle would be best, so you could grill up a bunch at once, and have a helper serve them to your guests on little saucers.
I suggest the saucers for portion control, so that each guest is sure to get one.

The Italian sausage from one of your videos a while back would be excellent in this sandwich. I’ve made it twice without stuffing it into the casing because I use it on pizza. It contains a lot of ingredients, but it’s well worth the effort. The anise and marjoram were a little challenging to find, but I did end up buying them locally for around one buck each.
I happen to have just eaten one of the worst lunches of my life, and here I find grilled cheese with olives. Sometimes it feels like the universe is messing with me.
The universe has an odd sense of humor.

Mayo on top and bottom, in leu of oil or butter, also comes out super yum.
Chef John videos is where I learned of using Mayo that way. Once you do it's hard to do otherwise.

Provolone Piccante is an excellent cheese to add to a blend for a pizza, meatball sandwich, etc.
This was easy to make and tasted wonderful! A grilled cheese sandwich, if properly made, is not bad - but this is SO much better, great flavor and not much more trouble than a plain grilled cheese.

I also like to mix the grated cheese with homemade cabbage and carrot saurkraut which is incredible. Similar idea with the acidity but it also adds crunchy goodness.

When I make a sandwich like this, I always toast the inside of the bread so it doesn’t get soggy. A sandwich press is a handy tool as well.

I love grilled cheese sandwiches with sauerkraut, so similar idea. The peperoncini juice would make a good marinade base, too.

Grill your sandwich, LIGHTLY butter the grilled surface and press into VERY finely grated parmesan or related cheese. Re-grill ... careful not to burn.
A side dip of a zesty sauce is 👍 too.
The first time I saw an actual grilled cheese, it was Chef Alton Brown that showed how to make it by putting cheese on the outside and not just on the inside, thus making it an actual grilled cheese.

The fresh mozzarella will actually probably work really well if you pair it with grated pecorino Romano - shred your fresh mozzarella by pulling it apart, then marinate it and grate the pecorino into the marinade. That should be really really good but you gotta use the real pecorino you have to grate yourself! The pecorino brings the flavor and the mozzarella brings the texture it will be perfect and the combination won't suffer the flavorless issue you correctly noted.

I never make a grilled cheese sandwich without grilling the inside of the bread first, stuffing it, then grilling the outside. I can't order grilled cheese sandwiches at restaurants any more because they always make them the way you've made them. The stuffing you've made looks Italian tasty.

I'm curious to try this and see how it's different. I suspect the acetic acid in the vinegar is having a similar effect to the sodium citrate in processed cheese, making it melt smoother.

Chef John, my wife and I watched this recipe together, and as for me, it sounds amazing. Sort of like a pimento cheese grilled cheese sandwich with better cheese.
My wife, on the other hand, looked increasingly fearful the more you described what you were doing. To the point she looked at me with deep concern on her face and asked, "Is it soggy?"
See, she has an EXTREME aversion to soggy foods, and the idea of marinated cheese seems to have cause near apoplexy.
Please advise, is the cheese, bread, or combi thereof soggy? I need to know or she won't let me make it.

This sounds like a grilled muffuletta. Take some of the olive relish from Central Grocery. Or whatever brand you can get. Grate your cheese into a tablespoon or two of the relish. That’ll get you the olive oil, seasoning, and pickled vegetables including the olives in one fell swoop. Marinate your cheese in some of this. Proceed as instructed by John!
