  • Dalgona (달고나) or ppopgi (뽑기) is a Korean sugar candy I grew up having from street vendors. The honeycomb candy is flattened to a thin round disk and imprinted with a mold before it hardens and becomes brittle. This candy is now a global sensation, thanks to Netflex Squid Game! Here are step-by-step instructions and tips for successfully making this dalgona candy at home! Enjoy!

I just made a few, I have an electric glass cooktop so I made them in a small nonstick skillet and poured onto a parchment lined cookie sheet and flattened the sugar using the bottom of my metal 1 cup measuring cup. Thanks for the recipe!

Just made these. Lot of fun to make and eat. Got to admit the advice on keeping a pot of boiling water on the side was really good made cleaning so much easier.

Thank you for sharing beautiful recipes. I would love if you could make time to demonstrate how to make Korean short ribs BBQ. I read your blog but I bet it will be fascinating to watch how you prep and cook the dish from start to the end.

After many failed attempts I finally got the hang of it and my ppopgi isn’t sticking. It’s all about the cooking and waiting before pressing…thank you for mentioning this important step. I’d like to know how the street vendors manage to make it so quickly without it sticking to the press. And for some strange reason mine have suddenly started getting a wrinkly look to them, something that wasn’t happening before. I guess I’ll eventually figure it out and have fun in the process 😅

First try, I used brown sugar. Failed miserably. Couldn't scrape it off the pan and took me a while to clean. Since didn't have white sugar, tried once more with brown, and baking soda like last time. It was better, but couldn't get the circle shape and it had a rather burnt taste. Let's see if third time's the charm, especially now that I bought the right sugar.

I'm honestly not sure about the science of it. Also, it hasn't happened to me so it's hard for me to know when and why it happens. Sorry!

the environment might be too cold.
fresh hot dalgona and cold environment do not mix. make sure it’s at room temp while cooling, once it’s completely cooled then you can put it in the fridge

Hi there, im really hoping to ask a question about the Dalgonas, I tried to make them, all process are fine until when we place it for it to cool down, it Cracked............. in fact.. we made 20pcs and 13pcs cracked........we've been practicing for over 2 weeks but the cracking..we don't know why it happens..cos we follow all the instructions strictly.. do you happen to know why Korean Bapsang nim T^T?

hmm that's strange. Never happened to me, and I'm quite not sure about the science of it. Do you think you're using enough baking soda? What do you think you're doing differently when they don't crack? Sorry really not sure.

if you can't press the cookie cutter through, that means you're cooling it for too long. What kind of press are you using to flatten it?

Use a non-stick base (such as a pan or baking sheet) or parchment paper. You can also oiled the surface and the press. But the most important thing is to cool the candy after pouring on the surface. I said in the video 15 to 20 seconds.
