Hey guys!!!! I like to scramble (immersion blend) my eggs and put them in the freeze drier raw. I then put them in my food processor after they are done drying making powdered egg and it turns out great!!! This way I can use the eggs in a variety of recipes and I am not limited to their use.
That's how I do it
Are you using them this way for baking as well?
Before you put the eggs in the freeze dryer make sure you scramble the eggs real good, mixing the eggs together to the point there is no whites still showing ,then put them in the freeze dryer. After they are done put the freeze dried eggs in a blender and powderize them, then put them in your desired container. Much better product, and mixes with no problems.
Great video, what a lovely gift
❤️ Sweet Gift
Wanda Bailey Clark..rehydrating calculations made easy..GREAT BOOK!! Has wverything you need to know about rehydrating freeze dried foods!
I don't know about cooking the eggs first but blending the raw eggs before freeze drying is easier to reconstitute and measure for cooking later.
I think most folks meant scramble/whisk the eggs then freeze dry them raw. That is how we prefer to do them anyway.
Becky at Acrehomestead scrambled her eggs before placing them in the trays. Once freeze dried, she then zapped them in her blender to powder them. She cooked some up and they looked just like fresh eggs 🥚 😋 🥚
Yes, that is so much easier. The only time I've ever seen anyone actually cook the eggs first was for camping, hiking or traveling. The whole meal including meats and cheese etc, was cooked and reconstituted with hot water so that no ice chest was needed to keep the meal cold.
I just freeze dried 160 eggs. I crack each egg in a glass to check to make sure the egg is good before I dump it into my blinder. I can put about 35 of my medium to small eggs in at a time and blend. I find that that amount of eggs fits comfortably into a tray of my large FDer. I just did a taste test for a group of 5 people using fresh and FDed. They could not tell the difference. By blending while raw you don't get the yolk issue. The FDed onions and bell pepper work great with FDed eggs.
I stumbled upon your video about purple deadnettle, and wandered to this one after you said you were in VA, as I am. What a fun surprise to recognize my friend Brigitte in your video! I saw her and kept thinking, "she looks so much like Brigitte..." and then I heard her speak, and knew it was indeed her. I'm so excited to learn more about you and what you're doing :)
When I commented, by scrambled, I meant just whisked not cooked 🥰 You guys are AWESOME thanks for sharing all you do & share!
💛💛💛
These freeze drying videos are very interesting. I knew absolutely nothing about the process before I started your videos. Great job ladies!!!
I cracked my egg, blended them with my immersion blender, and freeze dried them raw. I think of scrambling as the beating process, not the heating process. Haven’t cooked with mine yet but will be trying them soon.
Kaylee, I so appreciate these kinds of tutorials, because it causes us to think outside the box. We’re considering making the investment to purchase a freeze dryer and this one seems to be one of great quality. The gift you received, is beautifully golden. 💛 Enjoy!!!
I’ve definitely enjoyed having mine and I have been saving a good bit from buying in bulk and on sale to freeze dry!
Everyone is saying scramble first. What you do is whisk or blend them well, then freeze dry. That way you can use in other things such as cakes etc.
Definitely do not scramble them AND cook them before freeze drying them. Scramble them as in just beat them up and get them all one consistency, then freeze dry them. 🥚😉🍳💙💙💙
I like to mix the raw eggs in my blender, freeze dry them then put back in blender to make powdered eggs. My hens are laying in abundance right now, more than we can eat so freeze drying them helps us save the eggs.
I run them through a blender to powder them. 2 Tbs. each powder and water = 1 egg. Mix and let sit for 5ish minutes. No taste or texture difference noted
Good idea!!!! Thank you!
That makes a lot more sense, and very easy to remember….Thanks you!
You needed to fully scrabble the eggs before adding them to the FD. Then weigh the trays in grams , after it finished the first session. Write the weight down and return the tray for more drying, that’s about two hours. Re-weigh the trays again. If the weight hasn’t changed. Then everything if fully dry. But if the weight has dropped, then you need to return the tray for more drying, because there is still moisture. Keep drying till the weight stays the same and doesn’t drop.
I have also seen Becky from Acre Homestead. One of the reasons with prescrambling is they don't have those "clumps" that you were having when rehydrating.
Interesting thank you for sharing 🐝🍄🌞🌈
Your a sharp looking lady!
I’m glad you didn’t put that hot glass down on the cold granite counter. I’ve seen people lose their vintage Pyrex that way
Was listening, you said a listener said you should cook them first, They actually taste best if you don’t cook them first, best if you mix the raw eggs before putting them on the tray! They don’t taste as good if they’ve been pre-cooked with my experience! I believe once you have it in dry powder form about 1tbs is equivalent to one egg I believe. Love your Videos!💕
This makes me happy 😊
Hi guys. The way we do our eggs is usually raw and scrambled. This way the eggs are mixed up well. Once fd blitz them in a good processor to a powder consistency. To use or reconstitute we usually just use 2tbs egg powder to 2 tbs water (this is 1 egg). It’s much better doing this raw then cooking the eggs then fd them. We do have both but prefer raw as you have more options when you’re going to cook with them 🙌 But we all know it’s trial and error so awesome work.
Scramble them and freeze dry them raw. 2 tablespoons of powder equals 1 egg. Add 2 tablespoons of water to reconstitute and adjust.
I find that if I beat the eggs and then freeze them raw, they work the best. I also find that if I scramble them and cook them before freeze drying they seem a little rubbery. So what I think people were trying to say is whisk the eggs before you put them on the trays raw. I also have separated my yokes and egg whites and freeze dried them separately for later to try to make custards or meringues.
You can also put the raw dried eggs into a pancake base and if you want a quick batter you just add milk or water.
That’s a great idea!
I usually scramble and pour in the freeze drier raw. I have also done it like this and once it is done, put it in the blender and pulse them up the help break up that yolk. This breaks it down a bit more and seems to help the yolk reconstitute. To reconstitute I do equal parts egg to water, then let it sit for about 5ish minutes, give or take.
Raw or cooked, depends on how you want to use. But remember if doing raw that freeze drying does not kill pathogens, when reconstituted the pathogen will reactive. So, meat, eggs, or anything else. I did like you mentioned cleaning before changing to a different food. That's very important!
I've never seen anyone cook them first. They just scramble them and freezdry them. Rehydrate and then cook.
Thank you for sharing your different projects. Always teaching me something new
That is crazy. We should look at a freeze dryer in the future. To preserve foods for that long is a game changer.
Right!!!! It’s so awesome! I’m already making plans to freeze dry the majority of veggies from the garden!
@@TheHoneystead I can see where even after a year or two, the food saved would pay for the unit.
Oh 100% I have been able to purchase items in bulk on sale and stored them for later!
I totally get it. But at $3000 for a dryer like that, I think I'll save the 3k and use my dehydrator and vacuum seal. But if I had the money, I'd be picking up what you're putting down. As a new sub in loving your content! ❤
You all are just the sweetest!!!❤
u r the most beaufitul youtuber anywhere and all the talents!!! awesoem 08:06 its alittlechewier no it isnt and hten no not really?! powerof persuasian
The More You Grow, was that the RUclips channel that sent you the turmeric? I guess I could rewatch 🤣. Thank you for always having such lovely content ♥️♥️♥️
Yes!!! Erik is awesome 💛
Never a dull moment with Kaylee and The Honeystead.🤗🤗
I also do eggs.Freeze dry. I wisk up the eggs before freeze drying. Gring up after. use 2 tablebale sppons of egg to 2 tablesppone of water. Gene
Best use would be for baking.
If we prepare the eggs like you did in the FD, we will powder it up and then use it. Dissolves much quicker.
Oooohhh... I'm super jealous. That blessings box is amazing!
Such kindness for sure 💛
@@TheHoneystead It's people like her and you who will make this world better simply by being the good, kind, caring people that you are.
It was just the sweetest gift!
Raw eggs weight from LG to exlg to jumbo is about 2 ,2.25,2.5 in oz
I noticed when you vented your freeze dryer that the 90 degree fitting was pointing upwards. This is a water trap and can suck water back into your FD and get on the food.
You also need to get cast iron for cooking
Put the final Freeze Dry eggs thru a blender.
In my country we make nettles honey 😊 🌱🌱🌱
Ohhh I bet that is amazing
Great video I find freeze drying to be very interesting. I have chickens and that would be a very nice way to preserve the eggs. So I have one question how do you store the eggs after you freeze dry them?
Apparently it is 2TBSP of powdered egg to 2TBSP water will equal 1 large egg.
I wonder if the canned version of the eggs that are to last 25years were made the same way?
So how do you store the eggs once they are freeze-dried? Do you store them in the vacuum-sealed bags? We are getting way more eggs than what our family can eat right now and I love this option for long-term storage. Glad I stumbled across this channel! Great content!
❤️
I was searching for videos to do just this and am so glad youtube Recommended this! I plan to do this weekend and was so nervous I’d waste a bunch of eggs. Your demo has instilled some confidence in my. I’ve only done fruit and vegetables so far. New sub. Looking forward to watching more of your videos.
Ohh awesome! I actually am glad I kept the eggs raw! I can do a lot more with them long term!! Congratulations and happy freezing:)
Turmeric honey? Sounds excellent. How did it turn out?
Sorry to be so far behind on this. What drying temp did you use? Thanks
A little confusing… scrambled means mixed. It doesn’t mean cooked.
Hi Kaylee, I am in UK. What vacuum sealer machine do you use please? I can't decide from Amazon, as they all have rubbish reviews, so thought I would check on yours and see if I can get the same in UK. We can't get freeze driers that easily, so dehydrator or nothing really.
They will be a little rubbery
You could also just scramble them before putting them in the freeze dryer. That's how "Living Traditions" did there's and they came out fine.
Yeah I definitely will do it like that next time!!
Isn't this the process of making powdered eggs? I would assume powdered egg isn't cooked in advance.
Yes!
Maybe freeze dry deviled egg.
These look great. Unfortunately way out of my budget.
😳😳😳
Lol
@@TheHoneystead that’s so cool. I want one 😩😩😩
Sooo worth it 🙌🙌🙌
I heard honey was found viable after thousands of years in Egyptians tombs. Why would you want to freeze dry honey? 😮
Fix your drain hose. It's not properly angled, all kinked up. Condensation on the inside door before pulling out food product? Not good. 🤔🤔
Where are you getting 20+ years from? Don’t lie.
New subscriber, I'm gong to need help, y'all.
