Frontline Cooking: Chicken & Dumplings for Ukrainian troops

- I swore I would never return to Russia as long as Putin is still president (or alive), but I was presented with an opportunity I could not refuse. Through Ukraine’s new “visa-free” Russian travel regime I was given the opportunity to go to Russia and speak with frontline soldiers and hear their stories while feeding them a hearty traditional American meal. Bringing a batch of chicken and dumplings with some homemade teriyaki beef jerky to the guys who are fighting against tyrannical oppression was something I will always remember.
This video is a bit more about the experience and “journey” rather than the actual dish that was cooked. In this video you will be able to hear about how I connected with troops in the Kursk region and helped to deliver vital supplies to these soldiers. You will also see what it is like to live under constant Russian bombardment on civilian territory - in this case in Sumy.
While my time in Russia was brief, the impressions made by the incredible effort and organization of our soldiers at the front is something truly awe inspiring.

RECIPE
1 Whole Chicken
4 Large Carrots
1 Large Bunch of Celery
4-5 Large Onions
1 Garlic Bulb
1 Can of Peas (optional)
Milk
Butter
Flour
Parsley
Dill (optional)
Salt & Pepper
Stock:
Break down the chicken, separating the white and dark meat.
Roast the dark meat, bones/carcass, trimmed garlic bulb, and one halved onion, in the oven (or pan fry if no oven is available)
Once the chicken is colored and the fat starts to render, add to a pot (fat can be reserved and mixed with flour to thicken the soup)
Add peels and scraps from breaking down and chopping celery, onions, and carrots
Add white meat
Bring to boil
Once boiling, reduce heat and simmer on low heat for 2-4 hours
Soup:
When everything has thoroughly cooked, remove from heat
Separate chicken from stock, and pull from bones and shred
Filter and drain stock, set aside
In a pan, brown a generous amount of butter
Add cubed onions, celery, and carrots
Slowly incorporate a generous amount of flour
Once the mirepoix is done (veggies begin to soften but not brown of cook through) add to stock over low heat - bring to gentle simmer
Add shredded chicken
Dumplings:
The amounts depend on the thickness and amount of desired dumplings
Flour ~300-500 grams
Slowly add milk until the dough becomes a thick, sticky, slurry (Do NOT add too much!)
Melted butter or rendered chicken fat can also be added
Add salt and pepper
You can also add parsley and dill, if desired
If you wish for “puffed” dumplings, add a small amount of baking powder
Once you have a sticky paste, pull small strips of dough and add to simmering soup
Stir frequently
After 20 minutes the dough will cook through and the dumplings will set
Add peas to soup
To thicken mix flour with melted butter and add to the soup
Garnish with herbs if desired and serve!

The biggest morale booster there is, is a hot and tasty meal. If you are in combat, and may die at any time, food is a big deal.

Thank you for your efforts, I really liked that you cooked the chicken from scratch (not using stock cubes as suggested by some commentator). I can‘t comment on the political reasons for the war, but I hope it will be over soon, because it leads to so many human losses and tragedies, while the people responsible for the war are just counting their money. My favourite dumplings are made of eggs and semolina. It’s a traditional for my region. You should try them, it’s the taste of childhood 😅
Can you make things so much harder by making stock. Just buy a tasty pre-made powdered chicken stock or chicken stock paste. Chicken and dumplings is not a fancy dish and it works really well with powdered chicken stock. Also it's a lot less greasy. I know you're trying to do it the right way but that way it makes an easy dish into a difficult dish.😊 Also I've always had my chicken stock simmering at a very low boil when I add the dumplings. Same thing I do for matzoh ball soup.
