For anyone who has visited Kyiv you may have heard of this oddity. A divisive cake that is either loved or hated by people, but regardless of their take on it - it is certainly venerated.
Invented in the Soviet Union during the 1950s this cake has changed a bit in the 70 or so years since it was created, but the foundation remains the same. An odd based of meringue with nuts and icing.
This cake was also more than just a treat, it was a souvenir! For those coming from the Ukrainian capital, it was expected that you would bring this as a gift to your host, friends, or family when coming from Kyiv.

    That actually sounds good, maybe minus the carrots (cooked carrots are pretty blah). But I'm imagining the herring to be like Scandinavian pickled herring, maybe the sort that's in a cream sauce, which is neither salty nor fishy. The mayo sounds odd, but tartar sauce is really just mayo mixed with sweet relish and a little lime juice. At least it's not on pizza (like the Japanese do).

    Since childhood I've liked Kyiv cake only because it associated with holiday or party, but if there was a choice of other Roshen cakes, I'd always choose any other cake like Praha or Golden Key(not sure ther produce it nowadays)

    Chacha would be better if it was aged in oak. No it should be like grappa or aguardiente,,,, The problem with this one it was not aged in oak casks. If it were aged it would improve in taste.     When I had the cake in the US it always had that hard and yet brittle texture on the inside too and the nuts and it all tasted basically like one note of nut flavored sugar. Wasn’t a massive favorite of mine either. Is that not how it’s supposed to be? Is it supposed to be made differently?
