Thing is the hotel and Restaurant need to be ran as two separte busineses wiht the owner and GMs joining the two operations together. Co-ordintaion & communication are two pillars missing in a bunch of thease places. I honestly wish there was a version of this show with more focus in the hotel aspect. If Gordon had a co-star who could bust balls form the other half of the operation.
I remember when diner waitresses smoked cigarettes while taking orders...
I still remember when the host or hostess would ask us if we would like to be seated in the smoking or non-smoking section of the restaurant AS A KID 😂
And many diner restaurants will still have waitresses chewing gum while taking orders (smoking inside has become illegal since then) but 2 things. This is not a diner, and Gordon would still say they shouldn't and would have said the same about them smoking back then. My mother was a diner waitress. She also was a smoker. She never smoked when taking orders. It was either out back when you could take a minute, or in a back room.

Gordon was very correct about the no gum rule. At the restaurant I work at, my coworker was talking to a guest with a mint in her mouth. She leaned over to pour water for the guest, as she was talking, the mint fell out of her mouth, and into the guests’ glass.

I go to college for baking and pastry arts, and in the classroom we have a "no exposed jewelry" rule. No piercings, protruding rings, necklaces etc. My teacher has this rule because, when he owned a bakery, a member of the front came back to assist with the baked goods only for her earring to fall out and to get into the dough which was then mixed, backed, and then ended up in someone's food. Seeing the head chef with those dangling earrings made me get such anxiety.

@@jcdenton8221 I mean putting corona aside since this was definitely filmed before that, chewing gum generally means constantly opening and closing your mouth which leads to saliva pellots all flying all over the place which is kind of really bad in a kitchen where people want food made with as little human germs and saliva as possible.
Sure, talking also leads to saliva flying out and you're never gonna have totally sterile food from a restaurant, but this is basically like shrugging your arms and giving up on the idea of any form of cleanliness.
