For the ladder trick, you might want a chair or even few wooden blocks to secure under the engine bottom and stop that bike from spinning around. I heard Fortnine years ago reverted the footpegs, secured with jacks then jacked the bike on a ladder. Either way I guess. Wish you the best with your project!
Something doesn't look right with that fairing! It looks uneven. When you were painting it, the one side was longer than the other. It looks too stubby and chunky. The area where a screen would go is too high and not long enough nose. A racer is low and thin and streamline. I'm not sure what style you're going for, but it's certainly not a café racer. But each to their own.
