Beef & Potato Stew
Ingredients -
2 Tbsp (40ml) - Olive Oil
1 tbsp (14g) - Unsalted Butter
1kg (2.2lbs) - Beef Chuck Steak, Fat Trimmed & Diced
2 tsp (5g) - Smoked Paprika
8 - Red Shallots, Peeled & Halved
4 - Garlic Cloves, Grated
4 Tbsp - Concentrated Tomato Paste
2 tsp (10g) - Brown Sugar
2 tsp (10ml) - Soy Sauce
1 Litre (4 Cups) - Good Quality Beef Stock
5 Sprigs - Fresh Thyme
5 - Sprigs - Fresh Flat Leaf Parsley
1 1/2 Tbsp - Corn Flour (You most likely won’t need this)
400g - Yukon Gold or Desiree Potatoes, Quartered
Salt & Pepper To Taste
Bread to Serve
Method -
1. Place a high-rimmed pan or pot over high heat. Add olive oil, beef salt and pepper and sear for 6 minutes or until browned. Reduce heat to medium-high. Add unsalted butter, smoked paprika, shallots, garlic and concentrated tomato paste. Cook for 4 minutes, mixing well.
2. Add brown sugar, soy sauce, beef stock, thyme and parsley, salt, and pepper. Mix well and bring to a boil. Reduce heat to low, cover and simmer for 1 1/4 hours. Remove lid.
3. Add the quartered potatoes and stir through the sauce. Bring the sauce back to a boil, reduce the heat to low, and simmer it, uncovered, for 35-40 minutes or until the potatoes are fork-tender and the beef is very tender and soft. Check to season and remove from heat.
4. Serve the beef and potato stew with mash, crusty bread, rice, or on its own. Dig in.
Note -
I said corn flour in the introduction but didn’t use it in the recipe. It’s not needed

I am a firefighter and the station cook on my watch and I cannot tell you how much your channel has helped me come up with all these new ideas. Thanks chef!
Massive respect to you, Barry 🙏 it’s awesome to hear that it’s helped you out and you’re enjoying them. Thank you.
Nah not crazy. I love a good stew all year around. This one looks amazing. Thank you Chef Jack
Haha stew is good for anytime of the year, I agree! Cheers Joey 🙏
Can’t beat a good hearty stew Jack, especially in UK winters, with some suet dumplings .👍🇬🇧
You got that right!
Just looking for simple beef stew and RUclips recommended you. First time to watch and try your recipe. Just made a little adjustment with what I had. Replace shallots with yellow onions and add some chili. Omg the results is really good. Perfect with unlimited rice because I’m Asian living in Montreal. Thank you. ❤❤❤
Awesome! Thank you!
Thank you, chef Jack.
Another tasty recipe to add to my collection of chef Jack staples!😋
It’s the WAY that you explain and demonstrate almost effortlessly that gives us mere home cooks such confidence👍🇬🇧
Love the channel mate!! I hope you are keeping well and looking after yourself. You seem like a good guy and your channel has grown so much which is all your own doing, never fail to keep that in mind!!
Oh yes. I will try this. Been looking for a simple beef stew recipe for a while now. Thank you chef.

Delicious for our rainy days here in California!
Perfect for a cold windy Scotland 🥶 thanks Jack!
It's funny how perfectly timed this is because where I am, it's soooo cold and a good beef & potato stew is a great idea.

'The Pronunciation Police' LOL... Great looking recipe ! Winter here in Rochester, NY so this is well timed. Thanks.
Now if that doesn't do it for you. Then good luck elsewhere.
Just the way I like it. Nothing too fancy or drawn out.
Just hearty and flavoursome.
Thanks Jack 👍🤤😀🇦🇺
Appreciate it! This is such a good recipe
I can only imagine the aroma while that’s cooking 🙌🏻
Eating with the seasonal produce is always a win!

Very yummy. Your stock looks deliciously rich Jack. Do you make it yourself?
Hi Jack, love the recipe. Quick question, can you make this stew in a pressure cooker just to speed up the cooking time?
Now this is a top dish mate. Many thanks for sharing😢
Glad you enjoyed it thanks mate
Mate this looks awesome great job. when is the restaurant open
Thank you 🙏 maybe one day but no plans to do that at the moment. Got too many plans for this channel at the moment 👌
Grrrrrr, looks banging!
Chef Jack never disappoints. 👍
congrats on your youtube gold plate
Oh yeah , that's my kind of food and I would eat that any time of the year 💗
I am subscribed to ALL notifications but this is the first one I've seen in a long while 🤔 Not good ☹
It’s such a good all year round recipe. I don’t know what RUclips is doing to me. It’s been like this for the past 2 years. Great to see you back though. Thank you 🙏
Looks delicious, we add a crap load of vegetables, carrots for sweetness, no sugar needed
It’s a great way to use up what you have
“What’s… taters… precious? What’s taters eh?”
“PO TAY TOES boil em mash em stick em in a stew”
I've been frothing for a good beef stew...I'm definitely making this....🤤
Just an update Chef Jack. The weather is cooling off here and I’m looking for things to throw in my slow cooker and wanted your stew so came with the intention of writing ingredients down for shopping list. Where I live it’s hard to get chuck steak or stewing steak, so could I sub rump? Or it’s really not a good sub? This is being cooked in a double batch this weekend.
Looks delicious 😋
Looks good ❤
Thank you 😋
yummy
Beef stew! I am going to cook it!
Mmmm beef and potato stew :D
An old Italian trick is to add a couple of mashed Anchovie Fillets to a beef stew, its amazing!
(no, there is No Fish taste)
Delicious 😋
Hi Jack are you not maintaining your website with these recipes anymore? I remember they had reheating tips and other notes for substitutes etc
Still maintaining it. Just trying to do everything on my own can get a bit hard sometimes. Sorry if there’s a recipe that’s not on there yet
Is this good for meal prepping for a week
Sure is
Hi Jack- once the beef is browned, could you cook this in a slow cooker without any ill effects?
You can yes
I'm doing exactly that this morning. Will have it for Sunday dinner as flavours will be even better the next day.
Baby, you got a stew going!
You know it
Would using rapeseed oil affect the taste much?
How many servings does this recipe make? I Want to know so I can turn this recipe into a meal prep :D
Can't wait to give it a bash!
Still the best! 👏👏
Thank you 🙏
I think I will try this but Will leave the Soy Sauce out and reduce the Smoked Paprika to adapt to my pallet hope you don't mind
I don’t mind at all. That’s what cooking is all about. Make it your own 🙏
Hello, I am requesting if you could do a student meal in Australia, as a lot of students come to Australia every year.
Why?
can you meal prep this jack?
Sure can
What the ingredients you put chef
Full written recipe is in the description
My secret umami ingredient - a couple of snipped-up anchovies. Really add depth to the flavour and nobody knows they were there 😁
Was considering it for this recipe but decided to leave it out. Very nice though
Any way that you have a calories breakdown on this?
I noticed you had flour or corn starch on the counter but you didn't add it to your recipe. Was it edited out by accident?
No I didn’t need it. I had it just in case but the sauce thickened well without it. There’s a note about it in the description
@@ChefJackOvens Brilliant. Thanks for the video.
How do you personally get the garlic smell off you fingers
Just wash my hands. I use garlic so much I probably smell like it but I can’t tell haha
😎😎
Did I miss something? What happened to the cornflour?
No I don’t end up using it. It wasn’t needed. Had it there as a worse case scenario. There’s a little note in the description
I couldn’t see where you used the cornflour. Also tablespoon (Tble) and Teaspoon (Ts) I’m used to, followed your instructions but who knows how it will turn out by the wrong amounts ive used 😂. Just not used to the Aussie cooking terminology.
I didn’t use the cornflour. It was there just in case. I left a note about it in the description. 🙏
I wonder if using a pressure cooker would reduce the cooking time. Almost 2 hours after all the prep work ☹️
❤🤍💙 all your videos 👨🍳 #JACK👍
pan size too large for the stove. it might cause the gas can explode
It’s perfectly fine and it’s not touching
Seems like pretty large chunks of shallot no?
It’s cooked for nearly 2 hours. They completely break down and you don’t even know they’re there
@@ChefJackOvens Awesome. Can't wait to try it.
You pronounced pronunciation wrong, its pronounced pro-nun-ciation, not pro-noun-ciation 👮♂
Who gives a shit?
@@kozakura1 that was the joke.
LEAVE THE 2 tsp (10ml) - Soy Sauce OUT. IT'S Wheat based. indead you don't need cornflower aswell. the sauce will thicken itself. So you don't need any gluten in it. What a shame. Otherwise i could eat with you. oh so much sugar doesn't make it healthy aswell.
Weird energy from this comment. The word is indeed. Corn Starch and Soy sauce don't always have gluten. Pretty easy to find the versions without.
Soy sauce is needed. Cornflour is not used I had it there for worst case scenario and I have a note for it in the description. You can use gluten free soy sauce. It’s a very minuscule amount of sugar divided by 4-6 that this recipe serves
💯 👍👍👍
😋😋😋😋😋😋😋
