    This is my Go-to summer drink... Minus the sugar and olives. I add tonic water instead

    I'll have to try this, I don't like tonic water so this could be made without I'm sure!
    Would substituting lemonade be good?

    that looks pretty tasty, but I don't think it needs the olives though, I even think it would be a better drink without them. And if I were to use tsipouro instead of gin, I'll probably add some allspice berries.

    Do the skins make it bitter?

      If it's persian cucumbers (they're small with smooth surface) their skin is not bitter. If it's another variety it's best to peel them first

    The olives are not necessary.
