Porcupine never looked so good...they used to chew on our outhouse walls at night when we were at our cabin in Michigan. Uncle would go out and shootem.
I find the back bone similar to turkey necks.. I should of mentioned this in the video, a porcupine will taste different depending on what he is eating and they eat a wild variety of food depending on where they live.. Even here in the fall they eat from the ground and after the snow comes they change their diet and start eating tree bark and so he'll taste different in the winter because of this.. There may be porcupines in a certain area that eat a certain food and change their flavor and I may not even like it...
Their favorite is caribou, moose, geese & ptarmigan as well as salmon, trout, char and cod.. They are on holidays right now visiting grandparents, poor ole me got to go in the opposite direction to do my first aid course before fishing starts.. It got canceled on me a couple times because of covid restrictions and time is running out for me..
