Roosterkoek Recipe - How to make your perfect Braai Bread Dough

  • Roosterkoek or Roosterbrood is another must have accompaniment to any South African braai or potjie. In this recipe we demonstrate how to make a braai bread dough (BBQ bread) that can be used for Roosterkoek, pitas, rolls, pizza or even vetkoek.
    Make your perfect braai bread dough for Roosterkoek and cook on the fire next time you have a braai. The process of kneading the dough and proofing it, is a key to any good bread recipe. We take a bit of extra time to demonstrate this in the video - especially for you folks who have not done this before.

    I have never seen bread cooked in this way. That was interesting. I may have to do this next time we go camping. :-D

      Hey @Seesaw, give it a try and let us know how it went. Its a very popular tradition here in South Africa. We put lots of butter on, sometimes we add cheese and biltong, or jam. Enjoy. 👍🏽

      Did you know this is the exact same ingredients for vetkoek? Instead of putting it over the fire you bake them in oil then it's vetkoek

      Yes, its such a versatile recipe. We also use it for vetkoek and you can make pizza bases, pita breads with it too. For pizza we swap out a cup of flower with semolina for a crispy crust. Will try feature these in future.

    Will this work on a gas braai?

      Yes Kandarpa, a gas braai will work. Use the ridged steak grill plate rather than the flat plate on the grill. Just remember to turn often and use a lower heat. You want the bread dough to cook through. Too hot and you will have raw dough inside and a crisp outside of the rolls. Let us know how it went. 👍🏽👍🏽
