I thought that is what we do at Mass is pray. The entire Mass is one big prayer think about it as Catholics we open a prayer with the Sign of the Cross which itself is a prayer and we close a prayer with the Sign of the Cross. Do we not open and close the Mass with the Sign of the Cross? Everything within the Mass is a prayer whether were asking the Blessed Virgin Mary and the saints to pray for us which is intercessory prayer, to singing the Psalms and Liturgical music, the Lord's Prayer, Nicene Creed when we profess our faith and the consecration of the Eucharist. The entire Mass is a prayer.

This is a call back to the early church when Mass had to be conducted underground during the Roman Christian persecutions. Often the altar used was a coffin of a saint. This is why priests and deacons kiss the altar when entering and leaving mass.

I was very impressed with your story of walking into a catholic church and encountering the Blessed Sacrament. I have been lucky that during my time in Spain the closest church had the Blessed Sacrament everyday from 8:00am to 9:00pm, and I could go anytime. The Holy Sacrifice of the Mass was offered at 9:30 am everyday during weekdays. May God bless you in your journey.

Years ago we used to say "assisting at Mass", not going to Mass, not attending Mass, but assisting--we were taking part with the priest in the sacrifice.

A question, Father...when the bread, (and the chalice) is being elevated, what is the proper response or posture of the congregation - our heads bowed down or looking up at the bread (chalice) being elevated?

It's not about understanding what the priest is saying but about God. Say to the Father everything during the mass, everything your heart wants to talk about with it's Creator.
There is a distinction between your offering and that of the priest, which is why at the offertory he says "my sacrifice and yours..." and not, "our sacrifice". Therefore it can be fitting that you don't follow along with his words exactly. Just recall that the sacrifice of Calvary is being offered and that you are there to offer adoration and unite your own sufferings and good works to it.

There is probably a Mass in vernacular English near you. But if not, a missal (liturgy book) has the Latin and English side-by-side to follow along. Ask someone at your church for a missal. They might offer them for free use during Mass.

That's a great question. I wonder that myself. Bowing seems respectful but aren't we supposed to witness the transubstantiation?
I always assumed that since the host or the chalice is being raised that I should raise my head to see. I bow my head right before.
