I have family who live in Charlotte,NC and eat theirs with rice. My mother would make potato salad and greens with hers and that is the only way I can eat them when I did eat them but it is the only way I like to eat my pig feet as well. We also was raised to only eat pig feet, chitterlings in the fall and winter but not in the warm month, too.

They said that hunting season was during the cold months because the animals carry fever. Also, because of refrigeration. The summer was covered because they processed the winter months.
