Hi, it looks yummy. I am new to the Instant Pot and it seems to me that the chicken is often too soft for my liking. I think I could set this for fewer minutes, and the chicken would still be "done" (no raw meat), but perhaps the quick release is the secret? I usually leave my pot for natural release. Is that just too much cooking time? What do you think? THANK YOU.
I usually cook our cook out meat with a bite. My husband didn’t like the slow cooker because all the meat became obliterated. He loves the instant pot because we can control the cooking and reduce the cook time if too soft. I always use a meat thermometer, especially when I first started using the pot and reduced cook time to make things less soft. Check out some of my beef recipes - I don’t like it over cooked either. We like it tender but not as soft as others prefer. Enjoy!

Do you find the xanthum gum makes it slimey?
A little. You can skip the xantham gum if you don’t care to thicken it or if not doing keto, you can do cornstarch. 😊
Is it okay to leave the bones in?
Yes!
