This looks wonderful, going to make it, then puree it in the vitamix with some of the gravy for my upcoming post surgery "soft foods" diet. Freeze it in the baby food molds. Yum!

Yes, these were two thin pork TENDER loin, not a pork loin. A pork loin is a thicker cut of pork and less marbled which requires more cooking time. Have fun with your instant pot! 😊
These were pretty thin pork tenderloins so any smaller than these no. However, for other cuts of meats, like thick vs thin pork chops I would cook thinner ones with a little less time.

160F dries the meat out too much. The USDA recommended temperature for fully cooked pork is 145F. The lower temp produces a much juicier result.
