As a cajun myself, crawfish e’touffe is better than gumbo imo. Give it a try you definitely wont be disappointed. Actually think that should be what tourists think of rather than gumbo

I've eaten at some of the finest restaurants in Louisiana but the Jambalaya, Po'Boys, fried Catfish, and hush puppies at that place put them all to shame. My mouth is watering just watching this and remembering that food.

As someone who lives just one state away from Lousiana right off the coast of Texas I love some good jambalaya. That being said when it’s all top tier my favorites are: 1. Gumbo, preferably seafood gumbo not just crawfish or shrimp. 2. Etoufee, preferably crawfish or seafood. 3. Jambalaya, no specific preference.

If anyone doesn't know, the holy trinity he mentioned is called mirepoix. It's typically two parts onion, one part carrot, one part celery, though it can sometimes be made with peppers or other vegetables. It's used as a base in a ton of western foods. Well worth learning how to use.
