I also don't have access to shredded filo dough and made it with shredded wheat. I also used peanut butter instead of pistachio butter. It worked well. Toasting the shredded wheat with some butter in a pan also kept it crispy. Salted honey is also a good addition.
Take a chocolate bar. Warm the bottom on a hot pan for a second, remove and put pistachio mixture on melted side, do a second bar and place melted side on pistachio on the bar. Voila. No mold bs. :)
Never tried with kataifi, but I did run vermicelli noodles thru a food processor and fried them in butter 'til they were brown. Those noodles stayed VERY crunchie, even after I mixed them into the pistachio butter and kept the mix in the fridge for 3 days straight.

Maybe use the huge shredded wheat size pieces. They sell portion size shredded wheat.
