Naturally, this type of wait isn't as strong as other types of waits, but you could always choose a tile that you think the opponents will discard easily.

Winning a chiitoitsu hand awards you 25 fu, but if you declared Riichi and Ron, do you get another 10 fu added to the 25 fu awarded for chiitoitsu?
No, chiitoitsu is always scored as 25 fu and does not gain fu from any other source.

Just two. The second one is kokushi musou, which is a yakuman. It's covered later in the series.
