      I'd serve you and your spirit animal, I'll happily take the glass of wine. When a cook comes and asks about the meal, just agree with anything they say.
      If Ollie said "that ribeye is so buttery and beefy tasting" cook might say "we have some ribeye that has been dry-aging for 40 days, would you like to try some?" That's a ribeye that's been living in that New York apartment of a fridge for twice as long. But then again "it's just meat"

      I'm a caterer. I work in a kitchen. And yes, it is work. Also, even though there are harder and more stressful jobs, it is not for everyone.

      For real, really nice place. Honestly can't believe he told them to switch the order of the meats, like the chef himself came out and gave you his recommendation and after he leaves you're just gonna be like "Actually I like it this way instead"? Hope a waiter didn't hear that and tattle on them again lol

      @@DTKloves8 yeah but tbf chef hooni has been going there for a long time so he's built a preference for it. He just said that's how he liked it he didn't ask them to follow his sequence. Josh and Ollie should have eaten it the recommended way tho since they are new.

    I'm a chef, and I absolutely agree that you should let your guests send you the occasional glass of wine. I don't know anybody who doesn't cook better with a glass of wine in them. It's just one of the many magical things that I love about cooking

      I could never cook while buzzed on booze, but I was an absolute demon if I had a couple puffs of weed. Working out front, I was useless with weed in me, but an absolute demon coming back from break with a couple of beers in me. I would rock two sections alone with my eyes closed and I'd get tipped BANK.

    You really have to appreciate the restaurants that Josh and Ollie visit which are willing to work with the fact they are filming. It makes me even more interested in visiting the places they visit that treat them like family.

      I think it makes a big difference if the reviewer is a legit channel and not just a "yelp" reviewer. You can tell with the equipment Josh and Ollie are using, they are taken serious. And like your last sentence, it is free advertising for the restaurant and gets people in their door who see these good videos (and the food). Those steaks looked great.

      This channel has 3 million subscribers. Do you know how much companies are willing to pay for this kind of exposure? The restaurants are not "willing to work with the fact that they are filming", they're absolutely excited by the idea of getting a massive amount of publicity basically for free.

      US and UK butchery (how the carcass is cut) are distinct from one another, as is the breeds of cattle, not to mention how they're raised and fed.

    Ribeye is absolutely my favorite cut. It’s very noob cook friendly. It’s good medium rare to well done. It still stays relatively tender even at well done. Plus, ribeye can be sliced thin to make marinated meats or cheesesteak or whatever. Hands down the most versatile cut.

    Oysters are not a beginner's seafood experience. The first time that I ever ate an oyster it came right back up. Ollie is very brave as his face says it all!

      I've had a few oysters. Some I could barely eat, some so sweet and delicious I was legit excited. Unfortunately they're on a "sampler" plate and I never remember which ones are the kind I like.

      Its not a bad answer. Filets are great, but steak snobs will swear by the ribeye because it has much better marbling. At the end of the day though, whatever you like most is the best steak.

      @@collapsingagain The best steak is elk... Elk have less marbling, so you have to cook it faster. Use butter if the marbling sucks.... "we serve all of our steaks with butter"

      I love a good steak. Hearing them talking about it, I was getting hungry. I just had a NY strip steak last night, and I was just savoring every bite.

    This video made me realize that my dad, when we could afford it, made sure to set me on the right path for steak choices. To this day a Ribeye with the fatcap still on is in my top 3 favorite foods.

      The southern portion of the USA has the best food in the world. From west to east its coastal/baja mexican, southwestern, central mexican, texas BBQ, tex-mex, louisiana cajun/creole, deep south soul food, cuban, puerto rican.

      A lot of people forget that its a land of immigrants, and what people are always gonna bring with them from their home countries is their favorite foods. So you end up with pretty much all the best dishes from all over the world and unique dishes made from from the local environments.

    When trusting advice on what tastes good i always look at Ollie’s face! He never pretends just shows his raw emotions. Josh is a bit more conservative at masking his face to what he likes/dislikes.

    This has really become one of my favorite shows on You Tube! Ollie's expressions when eating certain foods just makes me laugh out loud. Josh always has a fun time and seems to have always done his research. on the places that they visit. It's always a good time!!

    Absolutely fantastic video, guys! I love how you are so open minded and socially vulnerable. The ENTIRE reason for these "experiments" is to learn and grow, which you BOTH show us time and again. You have the perfect gentleman to show you around the steak world. I've been in/out of the food industry for the last 30 years and HE KNOWS HIS SHIT! I also love how you recognize when you've gone against "the norm" and do your best to recover (sending the glass of wine). IMHO, I'd hire either or both of you to be my country's attaches of food/social integration. I know it's not a real title, but I'd create it, just for the two of you.

      @@throwacnt7603 it's the literal example in bad tv that the asshole says something like "it's about conquering, and getting the deal done". This is a literal trope played out in real life. Also a terrible example, the restaurant or steak you eat at had zero value or importance outside of that single meal. Also this chef acts like he couldn't cook just as good of a steak for his family at home.

    When chef Hooni was talking about tasting the cow and Josh immediately "mmm"ed, I was expecting a guest appearance from the cartoon cows from Gabi's videos.
    Also, he makes a great point that I think a lot of foreigners visiting America don't realize: Yes, our portion sizes are about two meals worth, but part of the reason is that you're expected to take some home. We're not the only place with a strong leftover culture (I know it's pretty common to cook once and eat two or three times in Japan and Korea, for instance), but I think we may be the only country where leftover culture is an integral part of the restaurant experience.

      This is definitely news to me. In my experience, I would think that having leftovers even if you can take them home is considered "unclassy". Love this for ya.

      @soonlet Yeah, in the US it's very much standard practice. Some people think it's a little _déclassé_ in the fanciest/most expensive of restaurants, but just about anywhere you might have your average date or birthday dinner or company team lunch or whatever reason random 99%ers go out to eat, no one thinks it's weird to get your leftovers boxed up to go. In fact, an easy way to tell how fancy a place is [trying to be] is whether they box your leftovers up for you or just give you a takeout container to fill yourself (though honestly I prefer the option to figure out what I want together vs. separated, and maybe get that one side the other person didn't like but I did, you know, better customization when you do it yourself).

      @@tildessmoo in Australia it’s 50:50 whether they’ll offer it. Never happen in a high class restaurant. If you do take leftovers they are not allowed to box it for you anymore (law changed awhile ago) they’ll give you boxes for you to do it yourself. I would hardly ever take anything home. I’ve done it but it’s rare for me. Don’t trust myself to eat it in time and then I’d just have to throw it out anyway. 😊

    Porterhouse steaks are my favorite and I ate so many of them when I was pregnant with my son, 53 years ago. Now I want to go out today and buy some from a local farmer and have it for dinner tonight!

      @@sanniepstein4835 a lot of places near me you can get a "farm share" and pay maybe $50+ every week/month/whatever and get a few different kinds of meats, maybe steaks, sausages, chicken etc. Like a meat subscription box

    It's interesting how oysters go through phases when they're considered to be peasant food for the poor, then expensive status food, then peasant food again. A good book on the history of oysters (and a very enjoyable really funny read), is Kurlansky's "The Big Oyster." All his books are really good, actually.

    I ran the private dining rooms in a French restaurant here in the States, and I am surprised that people don't know about sending a glass of vino as a pre-meal tip or a post-meal thank you. Just as I often tip before a meal (knowing I may need to top off with more tip later), I will sometimes send a glass to a chef before the food comes out, so they know that we are looking forward to a wonderful evening. I've seen extra courses (like an amuse-bouche) hit the table GRATIS!

      With how tipping culture has escalated in the US, if I'm dining out at a super fancy restaurant the last thing I'm thinking about is to also send the chef a beer or a glass of wine before or after a meal. I read Kitchen Confidential, from that pov drugs would be more suitable Would I send a glass the next time I'm dining out? Probably not.

      Honestly I don't think it's that common in the UK, so I'm not surprised they didn't know. I feel like the main reason people give wine to the chef/staff here is when they are too full to finish it. And literally no one would tip before eating, but then again the tipping culture is completely different here compared to the US.

      @@theskydeity Oh, I was referring to Americans. I did my post-grad in the UK and restaurant culture is definitely different. I remember the waiter looked at me oddly when I asked, "May I start with the (whatever) while I look over the menu."

      @@anasandoval6698 I am getting tired of the "Would you like to add $5 to your bull for our local charity?" (What? So you can get the tax write-off and not me?). Or "We suggest an additional $___ for back of house." (What? Have your wait staff tip out, use a point system, or pay your Boy staff more than what you are now). I really like the European system where the price on the menu is what you pay (food wise - where taxes are added in to the menu price). The tip is often a rounding up, because they pay them properly and don't expect the diner to pay for the help.

      Funny enough, when I watch these videos I only look at Ollie’s reaction because I know he’ll give us a genuine review, even if his tastes are different from ours. All food is “good” to Josh, plus he may be more focused on giving video-friendly “influencer reactions”.

    Lived in Turtle Bay (NYC) neighborhood for 39 yrs. Have been to every great steak joint in NY. Amber is second to none. Worth the ride to Brooklyn.

    He’s so right about fillet being the beginner answer. Filet mignon used to be my favorite and over the last 10 years of learning how to cook myself as well as eating at better restaurants as an adult, the ribeye cap is 100% the best and my favorite cut on the cow.

    You should come to Lancaster PA, you would love our PA dutch food here. Katie's Kitchen, Miller's Smorgasbord, Dienner’s Country Restaurant. The list could go on and on. We also have a lot of farmers markets with some of the best food stands you could ever imagine. Root's on Tuesdays, Green Dragon on Fridays. At Roots they also have a produce/plant auction and an animal auction.

    You guys can try nearly every cuisine here and it will be some of the best food you will ever have. You really have to try NYC Sushi. The quality restaurants have the fish imported from Tokyo. Go to Sakagura for drinks then to the amazing Sushi Yasuda across the street. Sasabune, Momokawa and Sushi Noz are my locals, all incredible. Then there is Sushi Seki, a lifetime favorite. The sushi is amazing, but the freshly made noodles and broth are divine. Hasaki on 9th str near 3rd ave is one of the best casual places, great for lunch. That and Korean barbecue would make great videos.

    It's interesting how so many flavors can be contained in a single animal, or even a single cut of meat.
    It's a lot like music. I once showed my friend (who was no novice to music, but was choral in his studies) how many different sounds can be pulled out of one cymbal.
    Meat is like that. Lot of flavors from one instrument.

You're a couple of young guys who shouldn't know much of anything and yet even though I've been all over the world including to the best restaurants in the world, I learn something from you every time.     Nowadays, we split a ribeye (my favorite cut...& really the only steak we usually buy) *three* ways. It's so expensive! Luckily, my husband & daughter prefer to split the filet so I get the cap! 💃💃💃 Oh, & I save the large bits of fat for our friends' dogs who we frequently watch. Happy dogs!

    On a more serious note, it's always good to send a glass of wine to the chef AND your server when having a meal like that - and as your guest notes, it will mean much better service the next time around (they remember generosity like that). ESPECIALLY if you are drinking anything vintage/rare - sending tastes to the staff shows your appreciation for them, but more importantly, also educates the staff as well. It actually helps make them better at their jobs.

      The educating them part isn't true. As a server, any decent restaurant requires their servers to taste and drink anything they will be selling so that they can properly describe it. The only exception is incredibly high prices wines which are only a small handful. Also while it's a great gesture, not every restaurant allows it. There are a lot that don't allow any drinking while a server or chef is working (outside of training). At my current restaurant, any time we get in a new wine or beer (we rotate a few beers from local breweries) all servers have to taste it.

      @@Persephoneia01 yea, but how many of you get exposure to vintage wines? Betting not as many as could, and also betting your restaurant ain't just letting you taste it to know the profiles. But a lot of places offer corkage fees if you bring in your own bottle, which is not uncommon, especially high end places - in the event that happens then it's 100% an educational moment, or at the very least one of appreciation.

      @@DJMarcO138 Most of us have a good knowledge of vintage wine because we drink and enjoy wine in our spare time. Most servers in high end restaurants are also encouraged to get their lvl 2 sommelier certification. Personally I have my own wine collection and mostly go to good wine bars when I do go out. Also while I see your point, it's frankly a bit patronizing for a guest to act like their doing us a favor by "educating" us instead just being nice and if you clearly have that attitude when giving us a glass you're just going to annoy us.
      Also yes, we are just getting tastes to know the profiles. Tasting wine vs enjoying wine are two very different experiences.

It's called being polite and sharing with people whose service you appreciate. And not every server is like you and can have collections to go back to, nor are all of them certified Somms or even WSET 2 certified. A lot of people are just regular ol' working folk.

    Recently I got to try a Brazilian Churrasco experience and OMG the meats. The start to finish was wonderful. I can’t wait to go back! We went to Fogo De Chao.

It sounds odd, but imagine if your favorite music, albeit good, was played so loud that it hurts your ears. Being a super taster is not always a positive thing. 😊

      @@catherinelw9365 That's not how super tasters work. Super tasters means they have extra tastebuds, so a lot of flavors that aren't present for most people are much more pronounced. Most super tasters greatly prefer bland food (which Ollie does). It's also probably why Ollie prefers the filet to the other steaks because filets have less flavor.
      I'm a super taster and can't eat most seafood because I'm much more sensitive to the fishy taste than most people. Often times if I have a bite of some one's fish that they claim isn't fishy at all, it'll still taste really fishy to me. It's not unusual for super tasters to dislike most seafood.
