Flatbread ala Olli. 2 litre of milk (semi-skimmed milk or whole milk) I prefer whole milk, but its up you. It should work also with skimmed milk. The milk should be handwarm (37 celsius) Baking powder, Salt (5tsp) Piece of yeast (the piece that he uses is 50g and he uses 1/4 of it) About 1kg of wheat flour About 2kg of barley flour Put the salt in the container you choose. Tear the yeast to smaller pieces so it dissolves better to the milk. Pour the handwarm milk in and stir until the yeast is dissolved. Start adding the wheat flour while stiring the mix. After you have put all the wheat flour the batter should be thick but not that thick that you can handle it. Then start adding the barley flour. When its thick enough start kneading the batter with your hands. Dont use too much flours because if you use your bread wont be soft. So use only that much flours that you can handle it. Let the batter sit under cloth 30 to 45min. Put some wheat flour on the table. Then start tearing the batter to small rolls (as you see in the video 6:06). Use fork to make holes to bread. Its important to do that because it will give you this unique look of rieska. Preheat oven to 200 celsius (392F) When the oven is ready bake this bread for 20minutes. I hope this is ok and you understand, because my english isnt the best.
Oh sorry I forgot the baking powder :D He uses 1tsp of baking powder. Powdered yeast works well too. In Finland we have powdered yeast in small bags. I think one bag is 11 gram. 11gram of powdered milk= 30g fresh yeast (that he uses) So What I recommend is that you replace fresh yeast with 11g of powdered yeast. Did you get it? If not, tell me so I can try to explain better.
