    This fritter recipe is simple, customizable, a light meal great for lunch or dinner. The ingredients come together in just 10 minutes. Such a delicious treat!
    Ingredients:
    1/2 cabbage shredded
    2 small carrots, grated
    2-3 scallions thinly sliced, optional
    3 large eggs slightly beaten
    4-5 tablespoons all-purpose flour
    2 cloves garlic finely minced or crushed
    1 shallot sliced
    1/2 teaspoon sea salt
    1/2 teaspoon baking powder
    1/2 teaspoon ground black pepper
    1/4 teaspoon paprika
    1/2 teaspoon cumin
    1/2 cup Milk
    1/ vegetable bouillon cube
    Vegetable oil for pan-frying
    Instructions:
    Shred the cabbage and grate the carrots and place in a large mixing bowl.
    If used, thinly slice the scallions (white and green parts), and mince or crush the garlic cloves.
    Add the scallions and garlic to the mixing bowl. Mix
    Next, add the slightly beaten eggs to the mixing bowl, whisk in milk. Then add the spices and salt.
    In a bowl add the flour and baking powder. Mix.
    Add the wet ingredients to the dry ingredients:
    Mix everything until and whisk together, until mostly combined.
    Add the cabbage and carrot and stir together, until all has been mixed into the batter.
    Preheat a large skillet over medium heat for about 4 minutes.
    Once the pan is hot add a couple tablespoons of avocado oil. Let the oil heat for 1 minute.
    Add about a spoon full of the batter to the hot oil, you can also use an ice cream scoop, as you desire and turn the heat down to medium-low.
    Fry 3 minutes per side. Or until the surface is golden brown and crispy. Repeat with the remaining fritter mixture, adding more oil if needed.
    Set aside to drain on a paper towel.
    Serve warm or cold with a garlic dip on its own or with seafood, meat etc.
    Store in an airtight container in the fridge for up to 3 days.
    Garlic dip Recipe:
    1/2 cup sour cream, or plain yogurt,
    1 tablespoon lemon juice or lime juice
    1/2 teaspoon garlic powder
    1/4 teaspoon salt and pepper, or to taste
    Combine all the dip ingredients in a small bowl and mix well. Serve with warm cabbage fritters.
