Actually regarding bell peppers French chefs will never use green bell peppers as they are bitter let alone the fact that they are NOT ripe! Each colour is indicative of its ripeness with red being the absolute best and the sweetest !
Here in Hong Kong it's usually cashews instead of peanuts, but why not both? And if you want to keep them crunchy, add them in right before dishing. BTW, salt in soy sauce not only adds flavour but acts as a preservative. That's why low-sodium soy sauce contains other chemicals that extend its shelf life. If that concerns you, use regular soy sauce in smaller quantities.

100%. At first I was willing to give John the benefit of the doubt and assume "exactly the same" was only referring to the bell pepper plant and not how they taste. Then he made that comment about "some people" thinking they taste different. Red, orange and yellow bell peppers are sweet. Green bell peppers taste like sadness.
What led me to this video was the question on google "what's the classic dish for Sichuan Noodles" and the answer was Kung Pao Chicken. I clicked into this one since I'm familiar with this channel. So I wonder if using noodles is more authentic to this dish. Either way, rice or noodles, it certainly looks delicious. Thank you, John.

I'm glad you didn't add celery. I know it often adds extra flavor but I never did care for it in Kung Pao. You get your crunch from the peanuts anyway.

instead of going shopping to try and find those chiles, Can you possibly subsiture using ground chili pepper instead? Since most people have that ingredient in their cupboard?
