Probably there are going to be more refugees if the war intensifies. When you are walking around you may chat with other Ukrainians if you meet them. If they wanna be on the camera then your viewers would come to know their stories as well.
Because you have arrived as an American you might have only 90 days in Shengen. Please check. I would recomend going south. Poland is cheaper to live than west. But you might find Bulgaria and Romania quite fun. As it will get wormer I would go to Albania. This will be a nice place in the summer and its out of shengen. All these option are cheaper to live and quite close if you want to go back. For Slavic people Serbia is fun. Cheap and they understand civilians being attacked.
