  • Hare Matar Ka Paratha is a delicious and nutritious Indian flatbread stuffed with a flavorful green peas (matar) filling. Here's how to make it:
    Ingredients
    For Dough:
    2 cups whole wheat flour
    Water, as needed
    1 tsp oil
    A pinch of salt
    For Filling:
    1 cup green peas (fresh or frozen)
    1-2 green chilies (adjust to taste)
    1-inch ginger piece, grated
    1 tsp cumin seeds
    1/2 tsp garam masala
    1/2 tsp amchur (dry mango powder)
    Salt to taste
    Fresh coriander leaves, finely chopped
    1 tsp oil or ghee (for cooking the filling)
    For Cooking:
    Ghee or oil, as needed
    Instructions
    1. Prepare the Dough:
    In a large bowl, mix wheat flour, salt, and a tsp of oil. Gradually add water and knead into a soft, smooth dough.
    Cover and let it rest for 20-30 minutes.
    2. Prepare the Filling:
    Blanch the green peas (if fresh) by boiling them in water for 2-3 minutes, then draining.
    In a blender, pulse green peas, green chilies, and ginger to a coarse mixture.
    Heat a tsp of oil in a pan. Add cumin seeds and let them crackle.
    Add the green pea mixture and sauté for 2-3 minutes.
    Mix in garam masala, amchur powder, and salt. Stir until well combined.
    Remove from heat, mix in chopped coriander leaves, and let it cool.
    3. Assemble the Paratha:
    Divide the dough into equal-sized balls and roll each into a small disc.
    Place a spoonful of the pea filling in the center of the disc.
    Bring the edges together to seal the filling and flatten slightly.
    Roll it gently into a round paratha (ensure the filling doesn't spill out).
    4. Cook the Paratha:
    Heat a tawa (griddle) over medium heat.
    Place the rolled paratha on the tawa and cook until light brown spots appear on one side.
    Flip and apply a little ghee/oil. Cook until both sides are golden brown.
    Repeat with the remaining dough and filling.
