  • Here's a simple and delicious recipe for Gajar Ka Halwa:
    Ingredients:
    Carrots (grated): 1 kg (preferably red carrots)
    Full-fat milk: 1 liter
    Ghee (clarified butter): 4-5 tablespoons
    Sugar: 3/4 cup (adjust to taste)
    Cardamom powder: 1/2 teaspoon
    Cashews: 10-12 (chopped)
    Almonds: 10-12 (sliced or chopped)
    Raisins: 2 tablespoons
    Khoya (optional): 100 grams (grated)
    Instructions:
    Prep the Carrots
    Wash, peel, and grate the carrots using a fine grater.
    Cook the Carrots in Milk
    Heat a thick-bottomed pan or kadhai. Add the grated carrots and milk.
    Cook on medium heat, stirring occasionally, until the milk comes to a boil.
    Reduce the flame to low and cook the carrots in the milk, stirring frequently, until all the milk evaporates. This process can take about 30-40 minutes.
    Add Ghee
    Add ghee to the cooked carrots and sauté for 8-10 minutes, stirring continuously.
    Sweeten It
    Add sugar and mix well. The mixture will release some moisture after adding sugar. Keep cooking until the moisture evaporates and the halwa thickens.
    Enhance with Khoya (optional)
    If using khoya, add it now and mix thoroughly. Cook for another 5 minutes.
    Flavor and Garnish
    Add cardamom powder, cashews, almonds, and raisins. Mix well and cook for 2-3 minutes.
    Serve
    Serve warm or at room temperature. Gajar Ka Halwa tastes best when slightly warm and garnished with additional nuts if desired.
