Made pasta for the first time with my 5 year old daughter. She loved it, it was great fun. First time she's helped the whole way through a recipe, even 10 minutes of kneeding. She loved the eggs part (and that it ended up a "catastrophe" when it escaped the flour volcano...) Our hand rolling was a bit uneven, and we didn't try any fillings but it turned out great regardless. Really glad I started watching BA, I've had loads of fun doing more cooking since I subscribed.

You can make "gluten-free" pasta or pizza, but it isn't going to be the real McCoy, anymore than "non-alcoholic" Beef Burgundy is. Or "Tofu Turkey" compared to the real thing. You can approximate something very similar, but you aren't going to get the real thing unless you use the real ingredients. I've been on an alcohol-free diet for years, due to health reasons, and the substitutes just aren't the same. (Although there are a few Muslim chefs who have come up with some very tasty stand-ins!).

Love this woman so much!! She's taking her job so seriously and is really doing everything she can to actually teach us something rather than just entertain. Now this is what I call caring and love!! She's very good at explaining things, and I can fallow easily even if I personally don't cook at this time in my life. I also like that she's letting us see her personality. Not a lot, but it's like the salt in the cooking - brings every video to life.
My 2 cents: I use "00 Flour" it's super silky, with a pinch of salt, a tablespoon of olive oil and I whisk the eggs before adding to flour and I do all the mixing in a bowl. I use Bel Gioioso ricotta if I can find it or Galbani if I can't and I add a pinch of nutmeg to it. I also suck at making the actual raviolis so I use a ravioli mold. The best part is that it all freezes really well so when I make pasta, it's really enough for a month or so.

I literally just made fresh ravioli before watching this... I'm mad I didn't see this before. I had such a hard time getting the ravioli to seal and I used egg wash. They all made it through the bail without bursting which is actually a miracle... I think it just needed the time to dry out a bit and really stick to either side... I'll be doing the half moon one next time!!

I really good way to eat all type of "pasta ripiena", like ravioli o agnolotti, is with butter,sage and parmigiano. It's similar at the way Claire did, but you put some sage leaf in the butter and then you mantechi everything together. It's a really quick but extremely good plate to do 😉
my handcrank one was 20 bucks so it's not an insane cost, however do ask yourself how often you're gonna use it because unless making pasta becomes like your Thing then you're gonna use it maybe twice. Maybe wait till lockdown is over and find out which of your friends already owns one that you can borrow.

Inspired, I ordered the attachment to my kitchenaid immediately, got it yesterday and made the ravioli and some noodles!! So delicious!! I froze some and will have the noodles again tonight tossed in the left over ricotta filling mixed with....? anyway THANK YOU! you are the best!! it did take hours and a learning curve, next time Ill be a better amateur.
My 10yo daughter had to film a "cooking show" video in French for her homework last night and our rottweiler popped into frame when she cracked an egg. I Made fresh Pasta today and had a nearly similar filling like this one, but with some sweet potatoe Mixed in. Some Butter with Honey and rosemary on top - it was delicious! 😍

If anyone is interested in italy we do 100 grams of flour for each egg we put in (1 egg, 100 gr flour/ 2 eggs, 200 gr flour ...) and salt to taste
I add the salt in the water stage and not in the pasta. I feel I can control the sodium better that way. Just personal preference.

If you have a rolling pin you can put thick rubber bands on the ends as spacers so you can roll the pasta out thinly and evenly

I Made fresh Pasta today and had a nearly similar filling like this one, but with some sweet potatoe Mixed in. Some Butter with Honey and rosemary on top - it was delicious! 😍

I made a ricotta filling but added spinach and chicken. Of course I watch this the day after I made the pasta. Gonna have to watch back through for the filling recipe.
