Dear Mateo beautiful shapes, pappardelle ripiene are amazing ..just a tip for you.. the Fuži are Istrian pasta but you do it wrong. They have to be the same shape like garganelli but with no stripes so you do not use the cavarola but just a flat surface
@@mateo.zielonka Fuzi (Fuži)are not triangle shape at all. They are typical pasta shape used with sugo (chicken or beef stew) in Istria (the north west Croatia or south Slovenia but just in Istria) .. just google Fuzi Istra 😀

Hi, I am in the UK. Does anyone know the best place to buy these traditional pasta tools in this country? I am so inspired by this video and all the possibilities. The pasta is just beautiful and your craftsmanship is exceptional. Makes me what to run out and get everything to become a pasta master!

All yellow pasta is made with egg dough - pastas starting with Culurgiones are made with semolina and water
What can you use instead of Semolina?
Hard to sub semolina as it’s give great texture and flavour - try bread flour x
