    Your flour looks so easy to work with. I don't use eggs but water to bind so I find mine hard to shape. Any suggestions?

      You usually run the pasta in a few different numbers to get what you need.

    Dear Mateo beautiful shapes, pappardelle ripiene are amazing ..just a tip for you.. the Fuži are Istrian pasta but you do it wrong. They have to be the same shape like garganelli but with no stripes so you do not use the cavarola but just a flat surface

      @@mateo.zielonka Fuzi (Fuži)are not triangle shape at all. They are typical pasta shape used with sugo (chicken or beef stew) in Istria (the north west Croatia or south Slovenia but just in Istria) .. just google Fuzi Istra 😀

    Hi, I am in the UK. Does anyone know the best place to buy these traditional pasta tools in this country? I am so inspired by this video and all the possibilities. The pasta is just beautiful and your craftsmanship is exceptional. Makes me what to run out and get everything to become a pasta master!

      @@mateo.zielonkaThanks for getting back to me! Things like the hardwood metal tool for the very fine pasta strips that you talked about, the ridged wooden boards, the wooden rolling pin and rod you used to shape the pasta around…. Just a selection of things to get me started really.

      All yellow pasta is made with egg dough - pastas starting with Culurgiones are made with semolina and water

      Hard to sub semolina as it’s give great texture and flavour - try bread flour x

      Red is beets or dragon fruit
      Blue are butterfly peas
      Green is spinach
      Black is squid ink
      Yellow is saffron
