@V Rostova you shouldn’t generalize, African Americans for starters go crazy with the spices and make bomb food, and for just Americans no matter to race ever been to New Orleans or the south the food there is excellent and well seasoned. Yes many of us struggle with our spices and cook bland food but let’s not generalize there are many parts that take cooking and food seriously

Once upon a time when I was small, my mom tried to grow chives. She couldn't figure out why it wouldn't grow until she watched me out the kitchen window and realized I was eating all the chives as soon as any grew. Hehe.

Cooking those veggie noodles in that broth that way was pure genius!! I've said this before, and I'll say it again.... It is so refreshing to see someone cook the way you do on a public platform.... Repurposing packaging, cleaning and reusing Ziploc bags and "disposable" containers... Washing out and using the dregs of hot sauce... Using "dead" or "expired" stuff because really, your senses should determine whether its good or bad, and not necessarily some printed date.. Your creativity and resourcefulness is just wonderful.. Always a fan!!

These June challenges have been so beneficial for me! I used to spend almost $200 on groceries. Last week I spent $40. I'm in shock!

Me: Spends 25 dollars worth of frozen pizzas in a day and watches this video to feel healthy
only dinner and lunch though, most people eat more then two meals so it does not cover her whole food expences for a week, but it is still very impressiv given the variety of dishes she comes up useing the same ingredients over and over again rearranged

I like that when June says budget, she means it. Actually cheap and identifiable ingredients that most if not all of us can get and find. Other channels have "budget" meals and they include foods like salmon and streak
Unlike other food from vegan food youtubers, I so love to see someone making food with SPICES and frying stuff in OIL and really focusing on flavour. I mean! I can literally taste every dish through the screen :'D Thank you for making all that delicious food!
And actually priced well. Most have ingredients that are not well know or very expensive which is not achievable by regular people
Pick up limes is a great vegan channel with a lot of spicy dishes - but healthy as well. She has some menus on a budget video etc, i can only recommend her 😊

@@unknowncaller69 if it’s brown it’s sweet. Which means it’s overripe. Perfect for making sweet meals and can help you reduce sugar. Like banana bread, banana pudding etc. Some people even bake bananas to get it to that overripe texture.
June is not only a creative chef, she’s a philosopher. “Who are you? Don’t ask yourself that question, it will paralyze you.” I have done that exact scenario many times.

growing up below the poverty line, i learned to cook with whatever we had. as an adult my skill with experimenting with random ingredients is top of the line. but im no where near the creative talent June has! i love your videos! it kept me going during lockdown isolation!
I'd love to see June do more vegan and vegetarian meals on a budget, but without the gluten-free restriction, which is a medical one, rather than a lifestyle choice.

I think it was primarily there because it’s a restriction she’s personally implementing but her $5 a day video was essentially completely vegetarian save for some broth

I don't see any problems with using spices you already have. One, spices are usually cheap and last a lot, and two, no one wants to see this poor woman eating bland cauliflower for a week. And if we're going to recreate the dishes, we're (probably) (hopefully) going to use them too.

Haha--but only because he was getting the hate before. I still wish he'd set the table, so the two of them could sit down and eat June's amazing food at the table and discuss the flavours.
The thing that stuck with me was the part in the beginning about the spices. Having a selection of spices (at least the basics) is absolutely an investment. The right spices can turn even the most basic of meals to something amazing. When I was a broke college students, I would pick up 1-2 spices a month and soon I had a pretty respectable spice rack. A+, would recommend!
Also you can often buy spices in bulk at speciality stores (eg Asian Grocers) rather than the tiny glass jars supermarkets sell that you'd use in one dish :P

@@caprisun6910 true, Dollar tree has spices, walmart carries some $.98 also. To start out with, with no other ones; probably italian seasoning, cinnamon or cinnamon sugar, and chili powder, and maybe garlic pepper seasoning 😁 my favorite 😁

It’s amazing to see how affordable groceries are there. A single avocado is $2-4 CAD where I live - no way I could’ve purchased half of that for $25.
In Montreal the avocadoes are now at least 1$ per avocado

Honestly, spices even aren’t that expensive. I have a massive collection that I’ve curated over 4 years of buying at TJ Maxx, Ross, and Tuesday Morning. My mom has a horrible habit of having 3 of the same thing so sometimes I get one from her

Dry spices last really long time if you just keep in closed container and uses only clean dry spoon. It is just dried powder what can go wrong? Many spices are even anti fungus and anti bacterial.

I've been on the same container of NutYeast for a year, so it's pretty economical.
If you get smoked salt, you can find it pretty inexpensive and a little goes a very long way!

People don't realize after you've already bought items they stick around if you didn't use the entire thing. I see nothing wrong with cycling out old products. I used to budget on 25$ a week and at some points I ended up not buying anything except fresh fruit/veg for an entire month because I was already prestocked from previous months.
People complaining about you using spices are crazy. We can barely make one meal for $25 these days. You are a true inspiration and possibly the best Chef I've ever seen.

I just found June last week and I'm so happy to watch this vegan episode. When i went vegan I maximized the use of the chickpea liquid to make desserts; when the liquid is whipped it has a meringue like texture and can be used as a vegan meringue.
Impressive creativity on a budget. Inspiring! I appreciate getting to watch the two of you interact with each other. The way you two treat each other is heartwarming and uplifting.

Idk about chickpea flour specifically, but for homemade tortillas they definitely need to sort of steam in their own heat for a while and the dough ball needs to rest for a while in the fridge before you start rolling.

Being a food professional helps a lot because at least half the trick of it is practice and experience. When you go to school for it and/or cook for other people all day, you get that experience much much quicker than if you're just cooking for yourself and your family at mealtimes, and you also get more diverse experiences outside of what you grew up eating. But you can eventually build up your knowledge as a home cook! You can expose yourself to all kinds of different ingredients and learn how to prepare them, so when you encounter a new ingredient it's easier to figure how how the heck to cook it, and what it should look, smell, fee,l and taste like when it's done. And you can also develop an instinct for what sorts of flavors go together. That familiarity with flavors and confidence with cooking a large variety of foods forms the basis for this kind of creativity in meals.
And then you add in constraints, which are a brute force hack for creativity in basically any scenario, food related or not. Having the freedom to do everything can actually dampen creativity, but once you have a restriction it becomes a puzzle to figure out. That restriction can be budget, or it can be that the CSA gave you twice as many veggies as you'd normally buy for yourself in a week and it includes green beans which you hate but you still have to find a way to make them palatable

Frozen tofu:
Freeze (in the package if you bought a 1# chunk; leave till you're ready to use;) thaw and rinse/squeeze out as much liquid as possible.
Shape, season and/or marinade, cook. The texture is a very meaty (think chicken nugget) chew, and it absorbs flavor like a sponge. It's got a dryer, less "gummy" chew than the tvp soya chunks from this video without being DRY dry. (I hate tvp....)

8 avocados for $2 is actually common depending on where you live. You get a whole bag of them cheap in California and they don't disappoint. Especially stopping at a little market or produce stand.
We get 1 for $2.5 in india.

Aaron and June are really sweet to each other. She is putting up with his spicy monomania and he is very supportive to her culinary expeditions towards the great unknown. And they both just love to eat food, it just shows.
My tip for soya chunks is that once you’ve soaked and drained them, roast them in the oven and that will reduce the sponginess 🙂 (or mushiness as Erin calls it!)
Also you can put the soy in a nut bag and squeeze the liquid so it can take the flavors and spices you add! It tastes so much better!
