As a blacksmith, generally ironwork is turned black because when you pull a red hot piece of metal out of your fire, it oxidizes and forms "scale" on it, generally blacksmiths will then while the steel is still hot (but not glowing) coat it with some sort of oil or wax (beezwax and lineseed oil are commonly used now but are considered a traditional finish) this oil will burn into the porous metal and seal it, protecting it from rust for awhile. Also as others have mentioned ironwork generally comes out a dark grey almost black just straight out of the fire. But that really BLACK look was generally from some form of coating like the oils or such.
Looking great, love the doors. Just FYI, the black on old iron is still iron oxide, but the oxide from forging comes out a nearly black dark grey, and is actually the source of the "black" in "blacksmith".

what do I have to do to get a list of citadel paints to match this process? I'm new to painting and worried about matching paints. I'm not going online for paints, and I'm not going to 15 stores to find what is now an inferior paint... is there anything I can do besides throwing it all in the trash?
Love the trick with the green ink. It realy gives that old door look you mostly see in games.
