    I remember as a kid a friend of mines mother came back from Jamaica with some coconut rum. She let me have a teaspoon of it. Man-o-man was that good! I'd love to try your rum from
    this run, George. But you're way down southwest-south of Dallas-Fort Worth so I won't be by any time soon. I have family down that-a-way so it may come to pass in the future.

    Hi George, great video as always. I’m wanting to try this recipe and method. You briefly touch on the temperature which is different when you run it as intended. Can you provide temperature guideline when running the column empty from start to finish. Am new to this and wouldn’t want to mess anything up. Thanks again!

    Looks like the one run with the 3" still is very clear. The one you added the extract to looks cloudy. Is this true?

    I love the videos and the wisdom, but one thought about the audio for this video and part 1..., If you haven't already done something since this video about your audio, I would suggest using an audio editing program with compression, noise reduction and volume leveling tools, and clean up the audio from the video, and then use that back in the video editing program to make your audio much cleaner for your videos. Audacity is a great freeware program for sound stuff, and can take and re-make your audio with nice improvements, if used well enough. Cheers! and thank you for the great wisdom and knowledge again!

    I don’t know if this will get answered just curious as to how critical water temperature is on condensing the good stuff. I know over 165 or so you may get huffing an chuffing. But is too cold actually a problem?

    Nice to have you on this. One Question tough; could you show what happens if you use the T500 boiler, with the copper pot still top and condenser for distilling rhum? What happens to the flavour or abv %? Thanks

    Love it ! I have tons of sassafras trees on my property . Wonder if I could do anything with them ? My grandmother used to make sassafras tee .Beer, wine , rum ,brandy ?

    Looks good. Another great video. BUT... can you change out your microphone? Really hard to hear you. Almost garbled at some points then super loud and clear. Mostly garbled. Missed some of your points and descriptions because of it.

    Just a question here for clarity on my part.... You had 5 gallons of mash, and how much rum did you actually make? I think you was expecting a gallon. You were just showing two pints of the gallon made?

    When i run my T500 i ran for a good 5 hours till the flow slowed right down but when i pulled the top off i still have like half a pot or more lr mash is that normal? Any idea what i may have did wrong? Temp was kept at 62-63C the whole run

    Love the videos George.. as an avid fan of you and. still it.. I've been looking at the t500 as my first go too ..making great water .. I have ample fruits and grains ..but the alimbic head makes me want to know the difference in your opinion. As a starter "water system "

      The alembic dome is a good purchase but it is quite expensive. I've used it before with great results. It truly is a personal choice.

    Hi George, Im operating a turbo 500 also and have been wondering about how i can retain flavour from various mashes. Great idea removing the packaging. Im wondering what proof it came out with these settings? And what you can achieve.

      I routinely get around 160 proof or lower once the packing is removed.

    Can you put the coconut flakes in the t500 column? I recall you did a video where you put a vanilla bean in the t500 column, but the vanilla bean wouldn't have as much blockage as the coconut flakes.

      Coconut has a low concentration of flavor so it does not really work as well. Tends to clump up and become a restriction.

    i'm interested in the final SG reading.... you started at 1.080. i buy my molasses ($1.00/gallon) at the sugar factory and have never added any sugar, consequently my SG drop is much less and i end up with a wash of about 6%. you talked about an expectation of a wash at 11%ABV so you end up with a SG of under 1.000? wow! i know that is what is expected with grain fermentation, but molasses? my SG's start at an avg of 1.085 and end at 1.038, so an average drop of 47 points. (thick blackstrap molasses). my mixture for fermenting averages just under 25% molasses with the remainder in water or water/dunder.

    T 500 documentation says not to go past 65.c / 150.f is it safe to push past that ?

      I have pushed this limit before and usually go as high 175F but only with an empty column. I would not recommend it with column packing.

    Love your videos George! Have you done any videos on the parrot specifically the effects of smearing? I seem to be getting conflicting opinions as with everything else. Value your feedback though as I am newly investing in equipment!

      BrothaVentureBikes who gives a shit? Don't get hung up on the little things and I doubt youd be able to tell the difference taste wise also.

      When you get used to calculating your run you will predict when your tails should arrive and you will be able to avoid any smearing that may happen. Otherwise, just stop as soon as you notice the odor change -smells like ass. You'll know it. Also happens usually below 70 Proof.

      Catfish, log onto TABCtexas and everything you need is right there. They will even send you a book or you can visit your local TABC office and get one.
      Don't be afraid to do so. When I went they were glad to see someone come in for something other than complaining. The staff sat down with me and explained it all. They were not interested in anything else but helping out.

    George great video as usual!! I have just a couple of things for you. 1 what was the final proof from the T500 before you cut it down to 80? Also have you thought about doing a video with the thumper? I have seen one in the background of some older videos at the shop?

      The proof of the original started at 150 proof and remained there for quite some time, as usual I cut it off around 100.
      I have worked with thumpers in the past and have chosen to distant myself from them because they are troublesome and very misunderstood.
      A thumper requires a special talent and is a real art. This is hard to transmit or demonstrate.
      There are simple ways to run them but unfortunately the last time I shot a video on this I was overwhelmed with discussions that were way off target and too misunderstood.

      Datil Man - So I’ve always used a thumper. I called George the other week and after talking with him about using a thumper I decided to run my next batch without it. Let me tell you what I noticed. First off, it considerably cut down my run time, by a few hours. I like that. Secondly, if you use quality ingredients and run your still slow, I noticed no difference in flavor. The thumper acts as a second “distillation” in a way, but since I’ve been running my finished product through a Zero Water filter, I don’t see the need for the thumper anymore. Hope this helps.

      Make your rum add sugar to taste then add pumpkin pie spices. Let the flavors marinade for a few days strain / filter and there you have it

    did you got only 2 quarts from the 6 gallons???? something wrong? I watch a video before and you said "on 5 gallons (15% abv) should end up with 7 quarts @ 160 proof(80%), is this right? because I became a student of yours! LOL I have a book and I been writing notes to remembers + I really want to learn the right way also this is why you are the only person that I have trust! Please don't take it the wrong way!     The second pint looked a little cloudy. My extract does the same thing when I cut it. I assume it can be removed with carbon filtering but that would remove flavor too. Your thoughts?

    Really enjoy the videos George. I have been playing with Rum a lot lately and have had some real rum drinkers (South American in-laws) to give me props. I think the biggest thing I have learned over the last few months us ...run it slow. I love the Molasses recipes but it makes me want to make biscuits while mashing!! :-) Keep 'em coming !

    Hey man, I got a copper still and I don't ever get anything comming out of the worm until the temp gets to 200, I've tried running at 170 to 175 but nothing comes out... the temp gauge is on the pot... why is that?

      Great thing about the T500, cuts are so easy - I run it just as I would a pot still, cut heads- test- then collect hearts and stop when I determine the beginning of tails.

    Question: can I grow my turbo yeast?
    Asking because it is almost impossible to obtain where I live, so I thought maybe if I use small amounts to make a starter like for a beer, then I can have this one package that I obtained last a long time.

      2OZ per gallon for a start. After that you use it to taste. It is amazing.

      Produce your rum first and then age it in dark oak chips is the most direct route.

    Couldn’t you just add shredded coconut to your coconut rum instead of coconut extract? Reason being a lot of extracts especially homemade ones like vanilla, are simply made by soaking vanilla bean in vodka. Essentially you can make coconut extract by letting shredded coconut in sit in a jar of vodka for an extended period of time. I believe if you did this you would have quite an exquisite and superior coconut rum once you strained the desired amount of coconut out of your final product.

      Trying to accommodate our European community members. Metric is so precise and easy to work with since it is a base 10 system but we grew up with a different system so it is foreign to us.

    As much as you talk you don't say anything, IE I thought you were going to add the coconut flakes to the mash, then you changed your mind, I thought you were going to add the coconut extract to the mash, but just found out you add it to the final product. From one video to another a whole bunch of shit changes which leads to massive confusion..

      He can't use the coconut flakes on the turbo 500 still. It doesn't have a traditional column to use the gin basket. He said in the first video that you can use coconut extract after distilling to fine tune the flavor profile in these cases. Someone isn't a good listener.
