I'm asking because you don't show us how to make puree and sauce on RUclips. I'm having trouble getting the weight of fruits needed for puree and eventually making the sauce. In this case, mangoes and passion fruits.
Hey Hanbit, I tried this and the taste is super amazing but I get lumpy gelatin that sinks to the bottom.... would it be better to add the gelatin to the milk when it heats up?
you add the gelatin after the milk has heated up - the best way is to 1) make sure the milk is hot (80~90C) and also b) pass it through a fine sieve. You should be fine then!

regarding the gelatin, don't really have a brand - just bought it locally. you just need to boil & reduce the passion fruit with a bit of sugar!
