One thing that never fails to bring me pleasure is watching an Italian taking pride in their traditional cooking. It's the appreciation of the simplest things like a great tomato sauce that makes it so enjoyable 😊 I'm a Scot but Italy is my 2nd favourite country in the world. The food is just incredible. 🏴🇮🇹
I'm not Italian, but you remind me of my grandparents a lot when they were alive. I'd sit on a stool in the kitchen while they cooked and looked every minute of it. I made this yesterday for dinner and having leftovers for lunch. OMG! PARTY IN THE MOUTH. I used chuck from last years cow, i diced up pancetta, and used my last of my Tomato Passata from last season and fresh basil from my garden. This is absolutely fabulous mea. Next time, i will make may homemade orecchiette

He cooks in a home kitchen, not a studio, and does nothing that anyone willing to follow his instructions cannot follow and do him proud. This is Italian home cooking, not some "megadollar truffle and wine " recipe.

Batali was a restaurant chef. Which is fine, he knows how to cook….but the big time restaurant chefs are weird. They kinda drive themselves crazy. And it’s easy to forget that a lot of the best dishes start in the home. Especially with Italian food.

My best friend’s Grandma Theresa would regularly show up on our front doorstep with a gift of jars of homemade sauce or an apron full of veggies from her vast garden. She made a Killer Cacciatore! May she Rest In Peace!
My grandma always made her sauce with country style pork spare ribs and pork neck bones. Delicious, that's how I make mine now too! She was a good cook and could smell her sauce from the next block over!

NOPE. Do not use just any sauce... Papa Pasquale's sauce is miles above any you'll ever find at a store. He has videos teaching us how to make his sauces. It's worth your time to look them up and use them. Thank you, Mr. Pasquale, for making my food so much better.
I tried your ciabatta bread and it was delicious. Could you do a recipe on ciccioli bread (chicola bread)? It was one of my favorite snacks as a kid and i cannot find many recipes for it. I think people would really enjoy it. It seems to be fading from existence unfortunately.
My father was a chef. And he spoke just like you.he was from Salerno. Just the noises of the food cooking is exactly the same.Always feel a sadness he’s not around anymore my kids watch your show and they say it’s nono.
