Hi! Mercado de San Miguel is probably one of the most touristy places in Madrid… you can’t go there to get a real feel for Spanish tapas and gastronomy. I would have suggested going to Ponzano street (highest number of bars/restaurants per square meter in Europe) or to Retiro area. FYI, 70 days dry age is definitely NOT ilegal… there are many restaurants that serve meats that have been dry aged over a year (completely legal, delicious and also one hell of an experience). Next time your in Spain, give me a shout!! You also must try El Capricho restaurant in Leon (voted the best meat in the world by NY times amongst others). Keep up the good work. Peeeeeeeace!!

I'm from Madrid and I never go to that market (Mercado de San Miguel). It's really focused on catching the tourist's eyes and (in general) it's not worth the price of the product that you are paying. Loving this videos in Spain.

You all don't know biology then. In my perspective he is saying he eat foods that are actually bad for health (poisonous, microbes, parasytes, fungi and etc.) then got immunity and resistance by eating them frequently. And
I get the idea but he is basically saying the food is not clean or prepared in safe way.
Stuff like those salmon rolls and the chorizo/octopus tacos makes me so bloody mad, love that you were honest about that haha!

Best Ever Food Review, you are the greatest online culinary experience since IRON CHEF was on television. My five year and my 17 year old watch these videos with me and are completely astonished by your display of respect for the different cultures you guys visit and of course by the food. I must tell you that today we watched one of your videos and one of my sons tell me that he wants to be a chef. My heart melted and it brought me to tears. I've got 4 boys and they all know that I pursued a career to become a chef but I couldn't continue the pursuit due to financial reasons, but my 5 year old is very adamant about watching me in the kitchen and watching these videos with me and he is the one that told me that he wants to be a chef. Please keep creating these videos, they provide so much information about a world that most of us don't get to experience and if it can inspire a 5 year old to pursue a career that brings joy to people then you guys are doing the right thing. I love you guys and I love the videos! In some weird way these videos are like Reading Rainbow or an inspiration like the Bob Ross tv show but with food instead of books and paint.
And if you ever get a chance, please come to Southeast Texas, our food is a blend of Cajun/Creole, French,Mexican, Vietnamese, and Tex-Mex, its the most exciting feature of this section of Texas. The food is wonderful and the people are respectful. But please keep doing what you're doing, I appreciate you and I know that others are appreciating you bringing this type of culinary experience to our attention. Much Love!

Yes some places in spain have the bad habit, unfortuntely, of prepring tons of tapas in advance and they can get dry, cold etc. Its a matter of knowing where to go and when. Those were extremely expensive and very disappointing for the price.

The market is Mercado de San Miguel which 10 years ago was incredible but now (and specially after covid) it is terrible. Sadly one of the worst places you could have gone to now as elsewhere Madrid's gastronomic scene is booming.
Some of the best food I ever had was in Spain and I still think about the dish 10 years later. This is really making me regret not visiting this year, and I almost did!

Well, that seems like a very touristy focused food market! Most of the offerings were tapas & snacks that have been sitting around for a bit! Not a place the locals would frequent, I suppose! The cure-dried salmon & the beef steak were my favorites!

I appreciate this video on a subtle level. Sonny is doing a bit of a slick move here. This guy has lived in southeast asian countries for half his life and is a professional eater so I know for a fact he's seen every food presentation trick/con/hustle that's ever been invented. It ain't his first rodeo. He mentioned bad financial decisions up front. He got those foods on purpose to show the rest of us how stingy some vendors can be and what to watch out for. Or maybe he wanted to finally make the 100 Bucks for once, what do I know?
I hope you'll cover Korea once again and bring us to traditional dishes away from the city just like your Japan series with Shizzy. 😍
Mexico and Korea are to me Sonny's best adventure out there. Vietnam, Africa and elsewhere in Asia are just so full of blood, bugs and weird shit that me puke while watching the videos.

Next time I'm in Spain, I'm going to meet that meat guy, he was awesome! Plus the look on Sonny's face at the first taste of the steak said all I needed to know.
As a person who has family members who own a bunch of farms in Spain that specialize specifically in Jamón Ibérico (and other meats), I'll explain why it is so delicious yet very expensive. The reason why Jamón Ibérico is so good and delicious, and it melts on your mouth is because Iberico pigs are expensive in general ( $ 4,500 USD - € 4,158 EUR per piglet). They have smaller litters, yield less meat per head, and take time to mature, which is why many ham producers around Spain cross-bred them with other varieties. Overall, they are also much fatter animals with veins of fat running through the muscle of the pig. This, along with the large amount of fat layering each ham, allows the Iberico hams to be cured much longer, resulting in a much more complex, intense flavor, with a note of sweetness that is unparalleled.
We also put them through a VERY strict diet throughout their lifetime. During the Spring and Summer months the pigs will eat grass, mushrooms, bugs, and herbs that are approved by us (the farmers). Then, from October to March, it is acorn season, with acorns falling from the dehesas. I will tell you this, the acorn is the favorite food of the Ibérico pig, and it will eat a lot of them!
So in conclusion, think of it like this. The Ibérico pigs are like the Wagyu version of Pork. Strict diet, careful lifestyle, and put them through a very selective and well-maintained environment in order to get the best results.

I enjoyed the video. some Spanish shop staff I met in my last trip are very friendly exactly like the steak chef and tuna belly slice chef in this video and offered me free samples of their food

Sunny, pro tip for eating sandwhich and burger type foods. Don't just grab the bun with your thumb, grab it with your thumb and pinky, it'll make stuff fall out less. Trust me it sounds weird but it's very effective.

I am a flag waving carnivore, but even on my best day, or 2 or 3 could I get through a Tomahawk steak like that one, I have never seen one aged like that & you'd have to really know your meat to get it just right, that was a pleasure to watch.

Sonny!!! You are crazy for eating that Tomahawk steak without being trimmed! The chef treated it terribly it for you! Never eat a steak that is dry aged without being trimmed of the hard/dry meat/fat. You can get sick really fast! Love the videos
That is the same thing I was thinking, I thought he was going to trim it when he said he needed to weigh it first, but he never trimmed it.

I live in Spain and spent about 5 weeks in Madrid. The market you went to is easily the worst market I've been to in Spain. It's a tourist trap- and the food is mostly bad there (as you experienced first hand). Totally overpriced as well!
Hope you managed to go to some proper markets before you left Spain. I just got back from Bilbao the other day, and the pintxos at the market I went to were about 1.50- 3€..and the quality was amazing. 👌

Once guga introduced me to dry aging, me & a friend been splitting the cost of full primal cuts to dry age.. currently waiting on a prime strip loin ( 13lbs or so) to dry age for 45 days in my refrigerator, I'm sure it'll be amazing just like the previous ones

Buñuelos are fantastic plain with sugar on top, they're like a cross between churros and doughnuts. I like buñuelos plain with no sugar. I say they're a cross between curiosity and doughnuts but I enjoy them more, but as a snack without squid ink, I think the squid ink was a mistake, stick to plain buñuelos or if you have a sweet tooth treat them like plain doughnuts and cover with plenty of sugar. I suggest eating them hot and freshly made, usually found where churros are freshly made maybe in some sort of outdoor market or van. If your feeling adventurous they are as easy as doughnuts to make. Enjoy!!!
I do like it when steak is cooked properly. Quality steak can be cooked almost 'blue', cheaper cuts not so much
