Made this for dinner tonight & all I can say is WOW! I had some chicken tenders from Costco so I used them instead of breasts. I also used some basil pesto that I had from Costco as well instead of fresh basil. I mixed that with the diced Roma tomatoes & let the flavors meld in a bowl while browning the tenders. Followed everything else according to the recipe. Let me tell you this is a really nice, balanced tasting pasta dish that is light yet satisfying. Of course, when it comes to recipes I've found that anything that Chef Joel posts is going to be outstanding & this recipe is no exception.

This time I had multiple colors of small tomatoes and it was SO GOOD, the chicken breast alters the flavor and the colored tomatoes, well, I wish you could have filmed it, a very nice recipe that can easily be altered but with similar results... Delish!!

I'm irish, and i love the richness of butter from ireland, but until recently we could not get it here in the states. The best butter here is made in wisconsin and it is very good. Recently a company here in the states has been authorized by the usda to import butter from ireland, and where are they located ? Wisconsin, lol, have not found it in the dairy case yet here in rural kentucky
