    Rolled Buttercream
    *Dries strong enough to package and stack.
    *Tastes EXACTLY like buttercream
    *has a soft bite
    * royal icing can be used to decorate after it crusts
    2 sticks (1 cup), soft butter, shortening, or a combination of both
    3 TBS. cornsyrup
    3 tsp. Extracts/flavorings/emulsions
    1 tsp. white gel color
    2 lbs. powdered sugar
    Beat with a paddle, beat all together until it comes away clean from the sides of the bowl. Should come together like soft play dough. Turn out and wrap with plastic wrap. Let rest or use right away.
    Store unused dough wrapped in the fridge(up to 3weeks). Freeze for 3 months. It warms immediately in your hands as you work with it.
    *Acts a lot like fondant
    To cover a cookie:
    Roll between two pieces of parchment paper. Remove the outer scraps(can be rerolled as much as needed) and lift the parchment to peel off the shapes. Attach with a thinly painted layer of cornsyrup.
    Let dry overnight to crust.
    Can be colored or painted.
    Attach dry molded pieces of rolled buttercream with cornsyrup.
    To mold or imprint:
    Dust mold with cornstarch. Push into mold. Freeze 10 mins if it is too soft to remove from the mold. Air dry overnight on paper towels. Can be painted, dusted, airbrushed, stenciled, and attached once dry with cornsyrup.
    * These are strong enough to package and stack after crusted.
    * dust with cornstarch before packaging.
    * DOES NOT MELT on the cookie in 80°-90° heat for 3 hours

      @@pamkennedybakes3649 I made this today and it came together great. However when I rolled it and tried to use my embossed stamp for a happy birthday stamp, the rolled buttercream stuck right to my stamp. Will it not work for stamping?

      You said what I was JUST thinking. I tried my hand at piping and flooding for the first time this weekend, and I had a HOT mess. I don't want to sell my cookies, as I just want it to be a hobby to give to family and friends. THEN, I saw this video on rolled buttercream. I believe I can do this!     so i totally made some cookies last night for my boys baseball teams using your rolled buttercream recipe, which was so easy to handle. My kiddos loved it, which was great to hear cuz i dont taste test anything! the only hard part i found was written on them or trying to write on them with food markers. I ended up using gel color instead, as the markers wanted to dent the crust. if you have a food marker that you used on rolled buttercream and it worked well i would love to hear about it.
    This recipe is FANTASTIC for anyone wanted to try it!!!!

      i was wondering if you recommend a brand of food color marker or pen you used and had success?
      I did let them sit overnight on the counter(counter ok or should i put in fridge for harder crust?) to crust over and didnt start working on them again until 2 pm. They were firm but as soon as i tried written on them it dented. so

    Love this RBC. Will be using it alot. My first attempt I decided to experiment. I wanted 1/2 peanut butter flavored RBC to top your chocolate sugar cookie recipe & 1/2 cake batter flavor for your reg sugar cookies.
    I added 1 tsp butter vanilla emulsion and 1 tsp reg vanilla. When it pulled away from the sides I divided it in half.
    I then added 5 Tablespoons Jif peanut butter and 40 drops LA oils peanut butter flavor and mixed with mixer 2 1/2 T & 20 drops at a time untill combined. It rolled out nice after resting and crusted over in 10 hrs. I used it the 2nd day from sitting in the fridge it was just as easy to roll too. Everyone loved the rich PB flavor on your Choc cookies !
    The 2nd half I made Cake batter flavored I added 1 1/2 tsp McCormick cake batter flavor and mixed it in the mixer.
    That was a hit too.
    The PB was not as soft as the other so next time I may add a tsp of kayo syrup to PB.

    I buy my powder sugar in bulk from Costco or Food Services of America.
    With that said 2 pounds (32 ounces) is 7 1/2 cups.
    I made a recipe similar to this years ago that I found in Betty Crocker dessert section.
    With that being said, I appreciate you posting this as I have moved twice in 5 years and I am disorganized with my cookbooks that I have collected for years. I don’t have the white gel food coloring and am in a time crunch to just make some pinks and blues for a gender reveal. I will get some as that would be handy to have.
    Thanks for sharing I have some of the supplies but that roller with the thickness setting is awesome!

    I'm new to your videos amd I'm loving them. On the rolled butter cream icing I have noticed that you are using the same cookie cutter as for the cookie but it looks like the rolled icing is a different size on the cookies in the video. Does the icing shrink as it dries?

      Just a quick minute. If still sticky just let it rest in the bowl 5-10 mins. Then turn out and kneed a few times

    Thank you for the excellent videos! I am making cookies for my niece's wedding in Florida which is on a Saturday. I need to have everything done by the Tuesday (ideally) or Wednesday before because I fly out on a Thursday. I feel unsure on how to time this with all of the steps and still be able to keep them fresh. I also need to pack them in my carry on bag safely. I do have individual boxes that I'm hoping will help. Would you be able to suggest how I can do this effectively? Thanks so much!!

      I would bake and freeze undecorated cookies now. You can fly with cookies just stack on their sides in a strong airtight container

    How well will this work with fondant molds to make roses , Unicorn horns ,ears type of fondant molds thank you for showing us all how to make rolled buttercream this looks pretty cool.

      It works great! I would pop the molds in the fridge for easier removal. The butter will firm up. Then air dry. Attach with cornsyrup

    Later that day, or within the next few days, does the rolled buttercream have a soft bite in the cookie? Also, after you make your buttercream and before you apply it on to the cookie, would you be able to store it for a few days? If so, how would you store it? (LOVED your informative video!)

      No matter how long it dries....it has a soft bite it has fats, unlike royal icing

    I followed the recipe exactly and it was amazing. It is so easy. I like how it crusts over and you can package them. In the video you said you can use part butter and part shortening. Will it still crust over if I do that?

      Yes, but you may need more cornsyrup or less powdered sugar.

    I am making molds with this buttercream.
    I was wondering how long can I store the molded pieces in the freezer? Is there any specific way to store the molded butercream pieces to protect them from breakage.
    I know the RI tranfers last a long time but I am thinking it may be different for molded rolled buttercream.

      Once dried, molded rolled buttercream lasts a long time. Mine are still good after 3 months

      You could if it was thicker and you may need to chill it before transferring it to the cake

      It has very low moisture. I recommend NEVER refrigerate decorated cookies. It can withstand over 90° heat in Florida

      Just knead until mixed. Don't worry, you can be vigorous!

    Thank you! I made this. Mine came out a bit dry and crumbly. I used all shortening due to cottage food laws in my state. Should I add a bit more shortening or corn syrup?

    Can you add crusting buttercream on top of the rolled buttercream? If so, at what point in the drying process? Immediately after applying rolled buttercream to cookie or after rolled buttercream has dried completely?

      You can add buttercream to buttercream anytime. If you wanted to add royal icing to the top you would need to let it crust first

      Dry overnight. Drying time is something you will need to play with in your environment.

    Trying this out very soon!! With the writing technique, is it okay to use edible pens? I’m walking into this blindly and am worried with how to decorate them, for the holidays!*Also, can these be made ahead of time and freeze them (with RBC) and decorate them after thawing? TYSM!!

      You can after they have crusted. Be careful with your pressure.

      It is buttercream. Tastes like buttercream. These were done with an impression mat

    I am use to working with royal icing. Once it's on the cookie, I will leave cookies out for a couple days to stencil, add decorations and to dry. Can you do this with the cookie that has rolled buttercream icing on it or should it be refrigerated?

      Yes you can! Wrap it in plastic wrap or place in an airtight container and FREEZE
