Dear Beth, I would like to ask, if I can use just the juice of a lemon instead of lemon extract? I have looked for it, but they don't sell it in my country.

They turned out wonderful; just 2 things.. I have plain thyme, so that’s what I used, and no lemon extract, so I used pure vanilla, I doubled on the lemon zest.. it’s a very clean tasting cookie. Thank you so so much!

But than I tasted the dough and determined that lemon wasn't going to taste good with the honey so I zested an orange instead. I've invented a new kind of cookie: Honey Orange Shortbread =) Delicious.
Your recipes are the best, so easy and simple but always delicious 😋 it really irritates to see people hitting thumbs down when there is nothing to dislike. Why watch if you do not like this channel. I personally appreciate the time they took to show us these simple but elegant ideas. I wish hateful people would leave happy loving people alone. You made french macarons, sea salted caramel chocolate skillet cake, crepes, lunch packing and these lemon thyme cookies and many more recipes that I can't remember, look easy. they were all as you explained and everyone thought I was a culinary genius. THANK YOU.

Omg, this recipe is perfect! It's so hard to to find gifts for my mother but every time my mother goes to whole foods she grabs lemon thyme cookies. I'm going to bake these for her, as well as make breakfast using your quiche recipe.
