In my headcanon Grievous was coughing in Episode 3 because his organic parts were slowly rejecting his mechanical prosthetic body. I imagine that Palpatine and Dooku on purpose made his body in such way so they get rid off him in later stage of Clone Wars when his role would be obsolete.
That is actually pretty close to the canon explanation for his cough. The reason why is because the rebuilding process was flawed and thus left some pretty nasty damage to his lungs which of course were one of the few organs that actually remained intact. Well, that and his eyes, intestines (which I found weird considering he doesn’t have a mouth anymore) and his brain. (Though the brain was surgically altered in multiple ways. The first was to remove his sense of mercy and warrior’s honor, as well as to allow him to learn all 7 lightsaber forms and actually be able to properly wield a lightsaber. There was one other thing that the altering of his brain did and that was suppress some of the memories of his past. All in all, the process was incredibly complex but the surgery actually led to a sort of success in that the same technology was used to rebuild Darth Vader after his fateful duel on Mustafar where the rest of his organic limbs were lopped off and his body both inside and out was severely burned and scarred.

It's stated later in the movie that Padme's defeat was at Nute Gunray's request upon joining the separatists. Dooku, being to busy to bother with such a petty revenge hires Jango to do it. Jango, being an idiot, outsources his assassination to Zaan (was that her name?) who didn't count on two Jedi guarding her at the exact moment she sent the worms. What really clinches it is the delivery droid deposited the worms and just stayed there THEN returned to Zaan when the worms were killed. It either should have immediately taken off after delivery or self-destructed when a Jedi grabbed it. The Sith would have won immediately.
Sidious does need Padme gone. You forget what playing both sides mean. Chancellor's office tips off Captain about assassination on Senator Padme. Anikin and Padme are pushed Jango kills would be assassin with Kamino Dart, leads Jedi to clone army, Jango leads Obi-Wan to Genoisus, war starts, Anakin on hook for darkside with Padme marriage.

4:40 To me the reason has always been pretty clear: Vader was torturing Han and Leia because he wanted to attract Luke, as he knows Luke already can use and feel through the Force. Luke hadn’t arrived to Bespin at that point, Vader just didn’t want his plan ruined because of some random stormtrooper/bounty hunter killing Luke’s bait.

Eh, too me it means too old to indoctrinate, since the 'mighty' Jedi could find the evil they were looking for, and got their butts kicked by said evil, in the form of pretty much what I call George Soros in a black robe.
I think there're a few explanations for why Darth Vader would keep Chewie alive: as bait to get to Luke, to keep C-3PO safe or as a debt paid after Chewie saved Ahsoka in a Clone Wars story.
Based on what also happened in the Force Awakens, no one apparently gives a flying f$@% about Chewie. I'm still pissed that Leia rushed to hug Rey after Han's death when they disembarked from the Falcon, totally ignoring Chewie who was off first and walked right past her. But hey, Rey's totally not a Mary Sue.
Remember how Vader had Han and Chewie tortured to help draw Luke to Bespin? A dead Chewie wouldn't be disturbing the Force like a beacon to draw in Luke, but a living one agonizing over Han being in carbonite and being detained and presumably still possibly tortured (remember they used ear shattering sounds to torture him) would. Edit: Oh, and if he cared about C3P0, he wouldn't have allowed him to be shot to pieces to begin with.
