Yummy! Thanx so much for sharing, Pam! Can't wait to try it! Funny Potato Salad story. Mama made a great potato salad, but we all, Mama included, loved Grandma's (Mama's mama) potato salad. One day, Grandma sent over a big bowl of her Potato Salad, and we couldn't to dig in. But, there was an unexpected 'secret ingredient' waiting to make this Potato Salad quite memorable. We sat down to dinner, passed Grandma's Potato Salad around, taking our helpings, and dug in, anticipating the wonderful flavor treat that it always was. Soon, we were all coughing, and reaching for glasses of ice water and ice tea. Mama figured out the problem, and called her mother on the phone. 'Hi, Mom! Mm-hmm, mm-hmm, yes, we tried the potato salad. Yes. It sure did look delicious, as always, but there was a bit of a problem. No, you didn't forget the paprika . . .' (Grandma always topped her potato salad with a lotta paprika, and she'd forgotten it once, and we told her we put our own paprika on it, but it just didn't taste the same, and she never forgot it again. The top of her potato salad was bright, reddish-orange bc of paprika.) Back to the phone call . . . ' . . . Mm-hmm, mm-hmm. Actually, Mom, you did forget it. By chance is the Cayenne Pepper next to the Paprika on your shelf?' (We all heard Grandma exclaiming loudly in the background -- we didn't have speaker phones, or cellphones then, just our landline, held slightly from Mama's ear.) 'It's okay, Mom. You didn't do it on purpose. We know. I scraped off the top layer, and sprinkled paprika on it, and it's fine. We're laughing about I now. Okay. Love you. Yes, we'll be over for Sunday dinner. Bye-bye!' By the way, when we went over to Grandma's on Sunday, first thing she did was take us all into her kitchen, and showed us that the Paprika bottle was nowhere near the Cayenne. We all had a good laugh, and fabulous potato salad! I miss those days. And those people. RIP, y'all, and thanx so very very much, for the magic and memories.
Looks so tasty! In Europe we have that but we use the early small potatoes, just halved, ( just about ready) and never eggs except with a homemade mayo with egg yolks oil and vinegar. The recipe is the same more or less without the Cajun seasoning but with a ton of fresh herbs ( parsley, spring onion lemon verbena) So lovely to see recipes from different countries yet similar ❤❤❤ Happy Mothers Day Pam ❤️
I really love your recipe of a twist on Potato salad. Also how you mix the mustard mayo and seasoning separate and then incoporating the potatoes, peppers, onions and celery afterwards. Brilliant! It really does help to not crush up the potatoes by over mixing the ingredients all together at one time.

I like to add the veggies when potatoes are hot to soften a bit. For my taste I prefer onions a bit more cooked. Thanks for sharing will try with bacon and creole spices..

I’m in Southern Louisiana and we add a bit more spice and a ton more eggs. Just a Cajun Country thing! 😃. Really enjoyed your video as always! Now add the potato salad to a big bowl of Cajun Gumbo and we are in heaven!!!
Yes, in the actual recipe their are more eggs but I only made a small amount that bowl is not as big as it looks. I would love to add more spice and the actual recipe has more spice that I listed in the description, but my husband does not like anything spicy! Sometimes I cook our food seperately even though its the same thing because I love the heat lol thanks so much!
