We really just have one goal - to make your food life better. Ok that, and be entertained at the same time. And have you learn a few things along the way. So let’s make it 3 goals then.
If you only want the steps to make something, like those vids shot from above with no people, no conversation no nuthin - then we are absolutely not for you. But if you wanna a little fun while you learn, then this is the place.
Cooking doesn’t have to be hard, it just has to be delicious.

THANK YOU ❗️ Развлечения
Tannins are what makes pickles crunchy, to be technical. Adding a bay leaf to each bottle, will add tannins and crunch to your pickles. Cutting off the blossom end of at least 1/16th of an inch, eliminates the enzyme that can make pickles soft, as well as unsafe to eat!
Thank you for this!
1/4 tsp per quart of water of calcium chloride also helps according to Kenji
Usually people cut the blossom end of the cucumber off as apparently there’s an enzyme
that can keep cucumbers from keeping they’re crunch in canning.
You can also soak your slices in a salt water ice bath overnight, just be sure to rinse well before packing them into jars!
That stem end you cut cos looks nasty.
For "crunchyness" of pickles you can use mustard seeds and of course horseradish (pieces of it if is a small jar), and also salt with iodine will soften your pickles, so use salt without iodine (be aware that not all "kusher" salt is iodine free). The salt with iodine is a modern "invention" (silly if you ask me), that's why today pickles are usually bad.
Hope that's helpful, even if is late. :)
This is why I love this show. It’s closer to real life home kitchen than a professional cooking video. Mistakes happen but you move on.
Instead of getting distracted by squirrels or shiny things …. he gets distracted by BACON … LOL !!!!!
I'm not Jewish, but my family also loves dill pickles... Much respect Sam!
Me neither but we have put them up for years and also the sweet and Bread and Butter pickles. For generations pickling was the only way of making the cucumbers last and it included onions, garlic and peppers. Obviously there were beets, eggs, and then Sauerkraut which is fermented as well. We need to keep these skills a live.
It’s not a Jewish original thing. Pickling food goes way back to around 2000 b.c. And pickled cucumbers originated from India. So I have no idea why this guy is trying to take credit for that or say that his Jewish ancestors invented it or whatever (cause that is totally false btw)
When I was a little boy, my babysitter complained about my garlic pickle breath. I was born in 1972.
My Mom just told her, that he likes pickles.
i’ve been cooking my whole life and i still have learned a lot from watching you. anyone who gives a yelp review already has no life so forget them.
I'm obsessed with pickles. I eat an entire jar every day. I'm going to start making my own! Thanks for the tips!
This was the first time I saw this video. It is full of laughable moments. I LOVED it!
Thank God you guys found yourselves with the new format. This was funny and all but it's so chaotic.
LOVE this guy!
Only recently found your newer content, but these older videos are hilarious.
I don't know what that yelp guy was talking about but keep up the good work! 👏
love it man... started with pickling but totally took a different turn
The egg disaster...I'm soree (phonetically Canadian, eh?), but I laughed at the 2nd egg falling on the floor..seriously though, LOVE your videos...You rock!!
Love everything about your videos. New and old! ❤️
The most chaotic, awesome and off the cuff episode I've seen yet! Kudos and Bravo! Bravissimo!
Now i need a bacon bowl. This episode was more entertaining than usual.
Max I love this video cause it is real and honest. And raw. Who is Lin ? I hope. One day y’all cook polish food. Or take a trip across Canada showing tradition Canadian food from coast to coast.
I never laughed so much. Thank you Sam 😃😄😁. Going to try your dill pickles 🥒
I'm glad I stumbled across this complete bonkerness during my lockdown Thanskgiving
Hilarious! Thank you Sam & Max
This show has come a very long way!!!! I love you guys the Boys are doing a smashing job!! SAM keep the Cool DAD alive!
Dudes and Dudettes, basil pickles are amazing. I highly recommend making them.
Andrew, should I add fresh basil? Is this in place of, or in addition to the dill? Thank you for this fantastic idea!
You’re show is awesome. Try using a bundt pan to making the bacon bowl larger
This is the funniest episode ever! I was absolutely dying from the tiny bacon bowl to the egg fiasco I mean priceless. Also let the dog have the egg it's probably healthier than his dog food. My dog cleans my kitchen all the time
I could live on dill pickles LMAO.
Just saw this. I made some Bread and Butter pickles this summer as well as some Sweet Mustard Pickles based on my Aunt's recipe. B&B turned out great, the Mustard not so great.
I laughed my ass off when he said, “this is the most random show ever”. Pickles, bacon bowels, eggs - some lost and some saved, and dogs playing with toys. Yep, fucking random indeed.
😂
I did not see any bacon bowels 😂 I probably would've stopped watching
this is an interestingly structured video
Blazing Saddles - my all time favorite!
Cutting off the blossom end a little is supposed to keep them crispy, some enzyme there makes them soft.
Perfection. I mean every kitchen is hard and you don’t hide it.
Blazing Saddles is the funniest thing ever created by the hand of man!
Here in the peaceful town of Rockridge, we like to keep things nice and clean.
Watching this as I’m eating pickles 😍
Love this guy!!!
“Hate is a strong concept Lyn” *knife unsheathes*
Others have made this comment on other videos, and I just ignored it thinking they were being ridiculous. But here it is, Sam and Max are both a little high in this video! Do you remember that old PSA commercial, "I learned it from watching you, Dad! I learned it from watching you!"
How do you make the brine?
I like Sam the Cooking Guy. I love the reality and different takes on preparing foods. Don’t always agree, but the outside thinking is great. It’s a great way of boosting flavor and showing how prepping is a huge pan in the ass.
If you don't cut the ends off(blossom end) your pickles will be soft. The blossom end of the cucumber has an enzyme that softens cucs when pickled. You don't need to cut off much just the tip
"Be careful to sterilize EVERYTHING! Very important!" Then he proceeds to handle raw bacon in the middle of the process and doesn't wash hands before handling pickles again.
had the precise same thought
How many dogs do you have ??? I know I have seen at least 3 .... love the four legged assistants
The half soft and half sour conundrum you guys experienced may be due to not cutting the ends off the cucumbers. Americas test kitchen says there's an enzyme in the blossom end of cucumbers that cause them to go limp, so they recommend cutting the ends off.
Have to check Clausens dills ! That might explain why you almost hear a crack when you bite them . Nobody likes a limp D... I'll.
Where's the part where you make the brine solution. I heard you mention 20 cups water and 3/4 cups vinegar. No mention of salt.
you need to bring this episode back in your new format THE WORLD NEEDS TO SEE THE PICKLE
This SOOOOOO reminds me of home! xoxo Sam!
Hey Sam/////It's lonely at the top//////If you have haters.....That just means you are not good.....you are very good at what you do.
I’m not sure I could allow someone to remain in my life if they didn’t like pickles. It just wouldn’t work out... lol
I loved this episode and it’s randomness; quick question though, did you use pickling salt in the brine?
"ya got billion of us"
Brilliant!
Just made my first batch of pickled onions
Well there's definitely bacon juice on the pickles now.
Sweetie Pie , I know right! I was going to say it on here, but glad someone agrees with me on it. It's raw bacon too!
Gordon Ramsay would tweak
Best episode EVER !!! :) Hilarious.
Classic Sam! We need more dogs in future videos. And he still breaks eggs!
The funniest thing was today I made bacon for the first time in months and I came to this video to learn to make pickles!
When that other egg fell out of the carton and rolled off the island, I laughed so hard. Am I bad?
Yes. Yes you are. Me too, apparently.
17:45 Perfect timing by max
I keep watching your show but i miss Steve so much. How is he?
Blazing Saddles was a great movie
The reason you had some soft is because u didnt cut the tips off. It has a chemical that naturallybwill make them soft.
You'll never go wrong with Blazing Saddles references.
Always cut the vine end off or they will get soft. Cut the end off and they stay crunchie. Better wash you hands before you touch the pickles again.
Sam, where do you get bulk dill in San Diego?
this episode was so enjoyably chaotic
If you cut off the blossom end of the cucumber it will remove an enzyme that makes your pickles soft.
Sam n son, screw all of the Dck beaters. They are just jealous of you and your show. You have great knowledge and are very entertaining to watch. Never never quit. You are helping so many people out there. Thanks for your awesomeness!!!
MY mom made sour and dill pickles without using vinegar......Sour and half sour pickles were made with just SALT and WATER.....Dill pickles were made with SALT and WATER and fresh DILL from the garden......You can add PICKLING SPICES too......NO VINEGAR...
The more I see of your kitchen the more jealous I get
This is quality content.
Side by side fridge must go
The key to a good doll pickle is to pickle them as soon as you pick them
Talks about "his people" and is beyond enthused with his bacon bow lol.
This is so different from the newest episodes!
Pickling dill pickles is likely the easiest thing to do, then the lame ass bacon basket (huge ass epic fail) but somehow the puppy playing with the squeaky toy made everything seam better in some weird way that I do not understand. Loosing me , lost me , in come the squeaky playing pooches and now everything is kosher. Your show is so many levels its hard to comprehend. You sir are a mad cursing genius. Keep up the great work.
Bacon Bowl , nice scramble , 2 pieces of Trader Joe's Sourdough Sandwich bread toasted with some Kerry's salted butter and a nice cup of Peet's French roast . Man o Man !!!!
Thanks .
That bacon bowl would be great with a poached egg inside of it. Maybe two of them !!
Another reason why that one batch had half soft half crunchy pickles could have been because you over stuffed the jar, so the pickles up against the glass got less brine mixture than the ones in the middle.
Good show.
ALL eastern Europeans LOVE PICKLES !!
christina laronge middle eastern too
Sam does that make me Jewish. I love dill pickles and I'm Canadian. I'm in the family now. Thanks brother 👍
I know I'm late to the party but - Did I just see a Gallon sized jar of Miracle Whhhhhip ?
Trim off the blossom end and they will be crunchier.
I miss this kitchen, haha.
British love small ONIONs too and they use Malt vinegar
4:20 soft pickle side was warmer or in sunlight ... or might have froze ? some fresh cucumbers have a firmer and softer side too , depending on how they grew in garden ?
Qinuo grows on Plains , Rice grows in wetlands ?
Egg was up in smoke... oh wait.... Sam up in smoke.... very busy and chaotic... up in smoke.... ? Lol. 👍
The short life of the reincarnated Humpty Dumpty...hit the floor and couldn't be put back together.
Gerdinia. have you done one on that stuff? With an Italian beef. 🤙
Let's support Goya Foods. Thanks.
Omg look how young and little Louis is! He’s so cute.
Could you do Aunt Bee’s pickle recipe someday.
Now I fully understand what happens if somebody suffers from A.D.D. All you need is a package that contains BACON!!!!
Awwwww Louis! 💛
The end of the cucumbers nee to be completely clean of bloom or stem there is an enzime that will cause the pickle to be soft
Really!!!!!...... who doesn’t love pickles!!!!
I love dill pickles and I make them myself but I don’t video it
Hahaha That’s what she said! Great video. Thanks.
You guys were all stoned making this.
I felt blazed just watching lol
Omg 😱! Watching this video from 7 years ago and how stoned or totally unorganized Sam was us cracking me the F up
I'm feeling a bit panicked. There is a real possibility of my not finishing a Sam the cooking guy video. Relaxed & casual is one the great things about this channel. But we may have hit overload on this one.
It's 17:05 & I'm calling time of death.....
Tell Jeff IF he has nothing nice to say DONT say anything @ all lol 😂
