charcuterie doesn't have an english equivalent however it's often pork in fact I'm sure it may need to be/contain pork. its cold meat cuts, but think butchers pic nic . my favourites would have to be the garlic sausage or the paté en croûte . maybe even rillettes on crusty french bread.🤤 and a glass of rose to wash it down.
The course is more expensive than a hands-on, in person course at the Ducasse cooking school in Paris... I'm sure what you offer is very good, but the few people willing to spend that much money are not likely to be beginners.

Basic Pâtés are not that expensive. Pâté de campagne, for ex is just Pork meat (main ingredient) and some liver,, egg, shallots, flour and herbs.
