Easy Carrot Soup! Make it with or without cream. Vegan or not!

Ingredients:
1/2 cup water
2 tablespoons butter
8 cups stock (chicken or vegetable)
2 cups orange juice
3 pounds carrots
1 cup cream (I used 10%)
S & P to taste
2 medium onions
2 tablespoons minced fresh ginger (or 1 tablespoon powdered)
1 teaspoon curry powder
