Classic Lemon Tarte....the BEST

  • Ingredients:
    Crust:
    2 cups flour
    1/2 cup cold butter (unsweetened....if you use salted butter, omit the pinch of salt)
    pinch of salt
    1 egg
    1 tablespoon ice cold water
    1 teaspoon vanilla
    2 teaspoons icing sugar
    - dock and blind bake for 10 minutes on 350 degrees
    Filling:
    6 eggs
    1 - 1.5 cups sugar (1 cup will give a more tart filling)
    1/2 cup unsalted butter
    rind and juice of 4 lemons
    -prepare on stove top
    Bake pie at 350 for 20 minutes
    * personalize the crust with herbs if desired (rosemary, thyme*
    *** you can also use the same crust for other pie recipes (apple, blueberry, etc...): if you need a top crust, double the recipe
