I've hired dozens of drunken carpenters over the years and some interviews consisted of them building saw horses...You came close but I prefer the lower brace of the I-Beam being at least 3/4 inch proud on each side and add a triangle gusset underneath to provide support. It keeps the horse stronger with daily use and supports scaffolding with two men. If the gussets extend down far enough you can eliminate your lower structure.
